Norwalk’s growing coffee shop scene just got one new addition. Carpe Diem Cafe’s goal? Specialty, higher end, baked goods made in-house, coffee shop parties, adult beverages, and a few Dominican dishes amongst the pastry and breakfasty offerings. Owner Elvis Fernandez is setting out to be different from the rest of the coffee shops in the area and is relying on his entrepreneurial spirit and some industry experience to make that happen with Carpe Diem.

Have a conversation with Seleste Tan for just a few minutes and the word that comes to mind is “humble.” Tan’s bakery, Lady Wong Patisserie, with two locations in New York City, speaks about it like she never expected it to be the megahit that it is. “I did it for a hobby during the pandemic and I never thought it would be big,” she says shyly. Her confections, inspired by flavors from her home country of Singapore, and travels throughout Southeast Asia, are her muse. And that hobby? When I sat down with Tim Topi to talk about his bakery’s expansion, and second location, this time in the form of a sit-down café, I jokingly told him that Wave Hill Breads could very well be the most mentioned place in the history of this website. It may not actually be a joke, though. Countless restaurants swear by Wave Hill and prominently feature their sourdough or burger buns on their menu and others have a deal with Topi’s bakery for custom loaves or buns. Off the top of my head? Damon Sawyer’s 29 Markle Ct uses their brioche buns, Jeff Taibe of Taproot serves Wave Hill sourdough with either butter or pimento cheese and bacon jam, Josie & Tony’s has them custom bake semolina for their terrific sandwiches, and they bake milk buns for Cwispy Chkn’s tasty fried chicken sliders. I’m sure I’m leaving out dozens more, but you get the idea.

2020 has at least made carbs, especially of the bready sort, sexy again. So, for this, I am thankful. Many have proven that by turning their kitchens into mini-bakeries this year. My cousin in PA, a lawyer by day, has posted about 100 pics of golden crusted sourdough; my neighbor, a sound engineer for Broadway--sadly all too quiet-- has added to my...eh hem...curves, with his newfound bagel prowess. I keep thinking I should buy stock in King Arthur Flour, then I forget amidst my food coma. Anyway, yay us for taking such a horrible time and at least turning a piece of it into something productive and tasty.

BUT, none of us have anything on Chef Kim Huang Wood and the real masterpieces coming out of Le Banh Patisserie kitchen. Just one afternoon with her, watching as she orchestrates her kitchen and the magic that comes out of it, I understand the difference between our hobbies and those who emit greatness. But that greatness, those masterpieces, have come from devotion, and true hard work.

Hello, CTbites readers!

Most of the time we bring you pieces on chefs but we’re trying something new that puts the focus on interesting food and beverage industry folks that ARE NOT chefs but have a tale to tell; think bartenders, independent bakers, farmers, maybe some brewers, or even that waiter everyone seems to know.

It’s only fitting to kick it off with Mike Geller, the owner of Mike’s Organic Delivery in Stamford. He’s not a chef, he has a story, and he’s really easy to have a conversation with. He’s one of the reasons why I thought of this series in the first place, so making him number one was a no-brainer.

If you’re unfamiliar with Mike’s Organic, it opened in 2009, strictly as a grocery delivery service. Now, celebrating its decade-old birthday, Geller expanded his business and opened his doors to the public with a mini market filled with carefully selected organic goods, fresh produce, and lots of local products. To boot, they host lots of special events and cooking classes with the likes of Geoff Lazlo, Ross Bread, and Nit Noi Provisions.
