Suburbia Sandwich Co Hits The Road in Fairfield CT In a Vintage 1969 Citroën

Phone is on DND this weekend, and if you’re looking for me, I’ll be in Suburbia. Lucky for you, it’s closer than you think. 

Right down Old Post Road in Fairfield, CT, lies “The Humbug,” home to Suburbia Sandwich Co. Suburbia is described as an “epicurean utopia, where pleasure and tranquility are the ultimate goals, achieved through the pursuit of simple, sustainable pleasures.” This European vintage 1969 Citroën HY van is exactly that: a food truck filled with artisanal sandwiches, drool-worthy pastries, and various lattes. 

The proud curators of this creative and unique menu are Jarrett and Liv, a couple who describe their business as “just like mom’s food, but better.” They boast local ingredients, fresh products, and an artful showcase of goods carefully handpicked. Liv and Jarrett have spent the last few years in Connecticut and hope to make it their long-term home, not just for themselves, but also for their European baby. 

The Humbug is an imported, 50-year-old van that made its way (very slowly, they’ll add) from across the pond, through Virginia and Miami, before finally landing in Connecticut.  This sleek black food truck may move no more than 35 mph through the streets, but this eco-friendly vehicle is flumeless, noiseless, and with the work of tech-savvy Jarrett- runs right from their home Tesla tap. A true labor of love, co-owner Liv says that without The Humbug, there would be no business: “She’s more than a food truck—she’s the muse behind their company. The inspiration for Suburbia comes from their shared love of cars, food, and community.” 

Their goal is to source the best ingredients—food that tastes great and makes you feel even better. Consistency is everything to them—consistently good, that is. The menu features a variety of sweet and savory treats, as well as gourmet sandwiches. It's ever-changing, and this week’s standout sandwiches were the “Dirty Martini” and the “Capo Crudo.” With cheese sourced just down the road in Fairfield, pastries and focaccia from Long Island and the Cape (yes, the same bread used at some very famous NYC restaurants), and quality meats, it’s all about serving the best.

Even the lattes—something I learned isn’t just about the espresso craft, but the milk—are top tier. Their pistachio latte, made with Byrne Hollow Farms organic milk, proved just how much that detail matters. Jarrett considers himself a “milk sommelier,” and honestly, he’s not wrong. But if coffee isn’t your thing, don’t worry, there are about four lemonades to choose from, including a seasonal lychee and a mint lemonade, all served in homemade cans that look as good as they taste. Yes, they canned the juice themselves, all from their very own kitchen. Liv’s drink recommendation? Their green tea. So truly, there’s something for everyone.

Jarrett’s favorite item right now is the “Capo Crudo,” and I have to second that. It’s a sweet and tangy eggplant caponata with fresh Mozzarella di Bufala, Prosciutto di Parma, a drizzle of balsamic, and homemade pesto on fresh Pain d’Avignon focaccia. The eggplant caponata was incredibly flavorful, and the bread? To die for. The second specialty sandwich, the “Dirty Martini,” is a clever twist on the classic cocktail: roast beef, Gorgonzola Dolce (a soft, mildly sweet blue), olive aioli, green olives, capers, brine, lemon, arugula, and shaved red onion, topped with Parmigiano Reggiano on fresh Pain d’Avignon. Perfectly salty, perfectly balanced. For my sweet treat, I tried not one, not two, but three pastries: a cinnamon Kouign Amann, their seasonal coconut pineapple escargot, and a classic ham & Gruyère croissant that was anything but basic.
