It was my first local, a place close by where reliably stopping in and not causing too much trouble develops into an earned mutual welcoming. The place feels like a friend's living room - you know where to sit, they know what you like, and everyone slips easily back into the conversation you shared last time you stopped in. The whole experience, whether as a relief from the day, the glow of alcohol, whatever brought you back through the doors - it just feels warm. Like I said at the start, it's gone now. The place I mention hasn't been open for years, but what about your place? What about so many of these shared environments whose doors we'll never walk through again? What will it be like at the old regular tables and spots we used to take up now the ones who lived through America's epidemic experience may reopen? The most famous of these new-breed bartenders was Jerry Thomas who, as a young man, trained in New Haven and went on to own saloons all over the country. He also penned a world-famous bar tending guide with recipes that is still in use today.Among the drinks Thomas is said to have developed is The Martinez, a mix of vermouth, gin, bitters and maraschino which he included in his guide. Over time, a version featuring gin, vermouth, and an olive was developed into the modern-day Martini. Read More

A classically trained chef who studied under the likes of Dan Barber, (Blue Hill at Stone Barnes) Molly is thrilled to open her first restaurant in Westport and described it to me as a “dream come true.”While this is Molly’s first restaurant (with plans for expansion already in the works) she is no stranger to the local food scene. Many may recognize her from Walrus & Carpenter. It was there she met her husband, Charlie Gilhuly, now operations manager for The Cottage and OKO and her sous chef, Jason Weiner, also formerly of The Schoolhouse in Georgetown and The Blake in New Haven. Molly expresses her gratitude to the Waldman and Bass families who have encouraged her to follow this path and who have partnered up with her.The Toast concept will feature a vegetarian menu with vegan options. Things may look a little different at first- outdoor dining only, reduced capacity, spread out tables, and in some cases limited hours- but we are thrilled to return to our favorite local eateries. Like many restaurants, Heibeck’s took the extra time to work out how to open as a takeout-only model with online or call ahead ordering and to put even more sanitation measures in place. “We definitely took a step back in our opening to make sure we were ready,” says manager Rachel Williams. “We love our customers, and our main concern was to make sure they’re safe and comfortable.”Williams also mentioned that Heibeck’s took additional time to properly mark where walk-up traffic should flow and social distancing markers once in line at the windows to help ensure customer safety. Entrance, for now, is through the parking lot in back, then let the arrows and signs guide you from there.To Heibeck’s regulars, noticeably absent will be their charming, pet friendly, BYOB dining patio that is usually decked out with tables, chairs, flowers, greenery, and string lights.
