Walrus + Carpenter Burger: The Bar is Raised in Bridgeport

A good friend told me that the WC Burger served at Walrus + Carpenter in Bridgeport near the Fairfield border was the best burger in the area. Those are strong words from someone I trust so I drove one evening and grabbed an outside table.

The menu is divided into several categories and each reads like a who’s who of comfort food. I was pleasantly impressed when I saw that the chef gave top billing in the Large Plates section to “WC Burger + Fries - Smoked mayo, bacon, bourbon onions, cheddar.” It was a simple decision and I ordered the burger medium-rare.

The burger was served on a metal tray accompanied by fries and small mound of pickle slices. There was a crisp char on the exterior and the texture of the interior was soft. I sampled the meat; it was rich in flavor, reminiscent of grass fed, the medium grind was still loose and it was moist without being overly juicy. It was an excellent patty. The first topping I tasted was the Bourbon onions.

The third-annual Wakeman Town Farm Harvest Fest dinner is coming up on Saturday, September 13, @6 p.m. This Farm-to-Table event is held on the farm grounds, under a beautiful tent draped with twinkling lights.

This special evening begins with hors d 'oeuvres and cocktails, and follows up with a full dinner prepared by rock-star chefs including: Artisan, BONDA, Le Farm, The Spread, Oak + Almond, DaPietro's and AMG Catering. Prosecco, beer and wine will be served throughout the night and you'll be rocking to the live band, "Last Call." Food + Architecture: A Conversation with Sushi Chef Keizo Seki and Architect Kulapat Yantrasast at New Canaan's Glass House

The Philip Johnson Glass House in New Canaan is hosting Feast of Clarity: Food + Architecture on Sunday, September 14 from 3 to 5:30 pm. Architect Kulapat Yantrasast and chef Keizo Seki will collaborate with the National Trust Historic Site for an intimate kitchen table conversation on creativity and a tasting of specially prepared sushi. Tickets are $100 per person.

This program is part of a part of an ongoing series of conversations at the Glass House called Glass House Presents. These programs sustain the site’s historic role as a meeting place for artists, architects, and other creative minds. Prior to each event, visitors can explore the Glass House campus and view current exhibitions, including Fujiko Nakaya: Veil.

Washington Prime Opens in Sono: Bustling Bar & Creative Food

Washington Prime recently opened at the entrance to the SONO “Ironworks” on the corner of Washington and North Water Streets and is already garnering positive feedback and enormous crowds each night. CTbites offered a sneak peek a couple of weeks ago and recently re-visited this high energy and bustling establishment on two separate occasions to sample the food.

Self-described as an Eating + Drinking Well, Washington Prime reflects the collective vision of locals and co-owners Rob Moss and Marco Siguenza. Moss, a native of New Canaan, is no stranger to opening high energy restaurants in Fairfield County, overseeing many over the last ten years. Siguenza is the epitome of the American dream, starting as a busboy at Match Restaurant and now 16 years later one of the owners of Washington Prime, a neighboring restaurant. The kitchen is overseen by Executive Chef Jared Falco, classically trained at the French Culinary Institute. Before moving to Fairfield County, Chef Falco honed his culinary skills at Daniel and WD-50 in NYC. The trio are now working closely to present a vibrant bar scene with delicious interpretations of tradition cuisine.

What does world class women's tennis have in common with some of Connecticut's most beloved food trucks? 

This year Valencia's arepas and Orangeside's square doughnuts happily collide with professional tennis at the Connecticut Open, the Women's Tennis Association tennis tournament held each August at the Connecticut Tennis Center at Yale in New Haven from August 15 - 23, 2015. 

Tennis fans can rejoice as some of Connecticut's most beloved food trucks will be represented within the revamped food court featuring local businesses including the Valencia Luncheria truckCaseus's Cheese Truck, La Petite FranceTony’s Orangeside Donuts, Spuds Your Way, and The Lobster Shack. CTbites was invited for an exclusive first look inside Chef Bill Taibe’s new restaurant, Kawa Ni, in Westport’s Bridge Square this week. Kawa Ni means “on the river,” an apt name for a restaurant in Saugatuck whose cuisine and service will take its cues from the informal Izakaya joints found in the Japanese cities of Kyoto and Osaka.

Is it an american restaurant with japanese aspirations? Or is it a japanese restaurant with american inspirations? Both, says Taibe, who distills his love of post war japanese culture and a farm house style approach to japanese food within the walls of the intimate Kawa Ni.  

Equal parts food and drink, with a capital F-U-N atmosphere, the 40-seat Izakaya-inspired restaurant will get the party started by the end of the month.

CTbites was not the petitioner, but is excited to promote National Oyster Day on Tuesday, August 5th...a day eagerly awaited by mollusk lovers throughout CT.

Today, iced cold oysters are the perfect summer food...high in protein and low in calories. There are over 150 varieties of oysters, but only five species, each traditionally named after the body of water or bay where they are grown. Varieties are known by a myriad of names such as Wellfleets, Blue Points, Kumamoto and Kuushi. The flavor varies by the conditions or Terroir they are grown in; rocky soil, tidal or brackish water, etc. with the Northeast areas of Massachusetts, Rhode Island and Maine providing some of the most delicious and accessible oysters

CTbites sat with Chef Geoff Lazlo of The Whelk on a sunny summer afternoon to sample some of these delicious delicacies while receiving an education about choosing and enjoying oysters. Lesson #1: tasting oysters is akin to sampling wine. Connoisseurs discuss the salinity and complexity of each oyster, the finish, the hints of melon or cucumber, and of course the juice, aptly named the “liquor.”

What’s that brightly colored truck parked at the Auto-Zone in Norwalk serving?

As you drive west/south on Route 1 in Norwalk and approach the Avalon apartments on the corner of Belden Ave, take a look to the right into the parking lot of the Auto-Zone. Several days a week, the site will include a colorfully decorated food truck with “Taqueria” emblazoned over the front windshield and a collage of articles, food photos and menus…all to tempt hungry customers into ordering one of numerous tacos, burritos and plates of Mexican inspired cuisine. That truck is Taqueria Las Salsa.


Barcelona Fairfield Welcomes New Executive Chef Ian Kokkeler

Barcelona in Fairfield has welcomed new executive chef Ian Kokkeler, with previous chef Helton DaSilva relocating south to man the restaurant groups second busiest restaurant in Atlanta.

Kokkeler hails from Austin, where he spent the last several years as executive chef as some of that city’s most well known restaurants including Uchi, Congress and the W Hotel in Austin He spent 7 years at Uchi, a Japanese restaurant, where plating and precision called upon his talents as an artist.

"I am artistic, and here at Barcelona we are rustic. I hope to blend these two with my plating style. As an artist, I like to paint and sculpt, and that translates well to cooking," said Kokkeler during our visit to Barcelona during his first full week on the job.

 


Burger Alert: The Spread "Cheeseburger"- Best Bar Burger in FFD CTY?

Executive Chef Carlos Baez assumed the helm of The Spread in SONO a year ago and the menu now completely reflects his vision of flavor and textural combinations. After a movie we decided to enjoy some of his light bites, and when they asked if I would like to try his new burger combination, I quickly agreed.

Chef Baez's "CHEESEBURGER" starts his fantastic combination with a large patty of grass-fed Kobe beef. He melts a few slices of a mild white Cheddar cheese over the patty and then tops the cheese-covered patty with house-made pickled jalapeño peppers, a few slices of crispy bacon, a little shreaded lettuce, a swath of spicy mayo, all encased in a sesame seed bun. The meat was loosely compressed to maintain its medium grind, and the cheese was a delightfully smooth addition. These two ingredients, alone, would have created a fantastic cheeseburger, but Chef Baez elevated the flavors and achieved a perfect balance of salty-spicy-sour with the pickled jalapeño peppers complemented by the bacon. The addition of the spicy mayo was a great finish. The bun was mild in flavor and did not fight with any of the other flavors. This was one great burger.

JOJOTO Brings Venezuelan Cuisine to Branford, Opening August 2014

The Venezuelan-inspired Jojoto Restaurant + Bar is opening in Branford this August. Owner Victor Figueroa and Neil Fuentes, our favorite Singing Chef, have teamed up for a restaurant that is "high-energy, Latin infused with authentic Venezuelan dishes."

Jojoto will open in a 40-seat intimate dining room that was previously occupied by Augie's Restaurant. The menu will feature rustic and traditional recipes that take inspiration from the land as well as the nearby shoreline, and include:

Costillas de Res of sofrito and cabernet braised short ribs with polenta, gremolata and truffle essence; Venezuelan BBQ with beef tenderloin, chicken, pork, choice of chorizo or blood sausage, yuca, guasacaca and crema fresca; Hamburguesa Venezolana piled high with lettuce, tomato, ham, queso, avocado, bacon, crushed potato chips, slaw, ketchup, mustard, garlic sauce, topped with a duck egg and served with truffle fries; Pabellon Criollo with rice, black beans, shredded beef and sweet plantains; and Gallinita Rellena, deboned, crispy skin Cornish hen stuffed with leeks and sweet plantain with an orange, lemon grass and honey reduction. Sweet Pea’s Baking Company is not just another small town bakery – it’s much more. Owners Rafael and Katjia Pita met as young students in Paris. There, on their first date, they shared their mutual dream of one day opening a bakery. Their journey brought them to Francisco, Paris, and Brazil, New York, and finally to Old Greenwich, Connecticut, where they decided to settle down with their 4 young children and finally pursue their dream.

Their storefront shop initially offered only artisanal breads, pastries and a few other select items along with their own in-house roasted coffee. In the year since they opened, they’ve transitioned from a small bake-shop to a café with an impressive offering of both prepared and made to order breakfast and lunch items. Katjia describes herself as the baker – loving the precision and exactness of it all, and refers to her husband, Rafael, as the creative one. Together their science and art created a winning combination.

Washington Prime Opens in SONO: A First Look

The corner of North Water and Washington was alive in South Norwalk this week with the opening of Washington Prime. A soft opening on Thursday led to a throng of over 300 guests wandering in to enjoy the vibrant scene at the bar and the reservation book for Friday filled so quickly, it was shut earlier than expected. This latest addition to SONO is attracting enormous attention and a visit inside and a look at the menu shows why.

The interior includes an enormous “U” shaped bar to unwind and enjoy a beer or one of their specialty cocktails and the dining area that spans the entire length of the right side of the restaurant is heavily focused on woods and foliage. Floor to ceiling windows allow for natural light to illuminate the space, comprised of dark wood tables and “moss” encased booths. All very organic and relaxing.

The ownership of Washington Prime is no stranger to the area. One of its owners, Marco Siguenza, is cousins with the owners of Cava, Harvest, 55 Wine Bar and Scena and worked with them since he arrived in the United States in 1998. The kitchen is under the direction of Executive Chef Jared Falco, spent time in several of Fairfield County’s restaurants over the last two years from Bar Sugo, to The Whelk, and most recently Mama’s Boy Southern Table and Refuge. His opening menu shows a desire to place a modern twist on some classic dishes.
