Get Cooking With Aux Delices Ingredients Features Cooking Classes Stamford Liz Rueven August 27, 2010 Summer Comfort Food was the theme of the class I recently attended at Aux Delices’ Cooking School in their commissary kitchen in Stamford. As we are smack in the middle of this steaming season, I was happy to be invited to relax, observe and learn something new about how to prepare summer dishes, utilizing the season’s bounty. Aux Delices has retail store locations, all with seating, in Darien, Riverside and Greenwich. The shops offer owner/Chef Debra Ponzek’s culinary creations of prepared foods and a unique collection of specialty food items. Their name translates as “all the delicious food in life,” and considering their choices of scrumptious take out items, private and corporate catering offerings, and classes at their cooking school, the name is certainly apt. It was too good not to repost, and with the summer winding down, why not celebrate our last days of outdoor cooking with this quintessential culinary experience? Nothing says “I live in the North East” like mollusks and crustaceans swimming in a boiling pot in the yard or on the beach. The classic New England boil is the best thing going for large group gatherings if your picnic area allows for propane. You say "Of course, they're great, but..." But what? Why you gotta be so afraid of everything? Let's look at the pros and cons. Read More

Chef Nicole: Salmon Nicoise Salad w/ Dijon Vinaigrette Features Ask Chef Nicole Chef Talk Nicole Straight August 18, 2010 Nicoise salad has always been one of my favorite salads. The classic combination of textures and flavors is ideal for any lunch gathering with friends. Although the standard preparation calls for seared tuna, I like to change things up by occasionally and go with salmon atop my bed o' greens. Using salmon is an easy way to add delicious lean protein to your diet while getting Omega 3 fatty acids and vitamins B-12. This salad is surprisingly easy to make but the finished product will have you looking like you've been in the kitchen for hours. Read More

We always pick way to many berries and come home wondering what we’re going to do with them. This recipe for Blueberry Peach Crumble is always at the top of our list. Fresh blueberries freeze beautifully. Simply wash, and freeze in a single layer on a cookie sheet before transferring to a ziplock bag. I’ve been asked over the years what the difference is between a crisp and a crumble. After some research, I found these general definitions, but the truth is you will not find a universally agreed upon answer. Whatever you call it, this dessert is simple, summery, and delicious! Great Wine Buys for An All American 4th of July Ingredients Features Holiday Wine Chat JoAnn LoGiurato June 30, 2010 Our nation’s birthday brings out the patriotism in me. I like to make a toast to American winemakers by celebrating with all American wines on the 4th of July. Whether you are at the beach, the pool, picnicking in the park or on your boat, here are some wine recommendations and things to consider before the fireworks get started: 1~The wine needs to quench my thirst—for that I prefer wines with good acidity and crispness. I’m thinking-- a crisp, juicy Sauvignon Blanc. I like these California producers Girard ($16), Merry Edwards ($35), and LEED certified, organically grown Hall Napa Valley ($20). I also really enjoy the smokiness of Ferrari Carano Fume´Blanc ($17). Sauvignon Blanc is great with green salads, vegetarian dishes and anything with goat cheese or fresh tomatoes. Read More

Thomas Keller...Only Minutes Away.... Features Cookbooks Events Amy Kundrat June 22, 2010 Don’t miss Chef Thomas Keller signing copies of his "ad hoc at home" cookbook this Friday, June 25 at 12 noon at The Westchester in White Plains. Chef Thomas Keller is the last chef whose cuisine would be described as “accessible” or “approachable.” If you’ve stepped across the threshold of any his celebrated restaurants including The French Laundry, Bouchon, Ad Hoc, or Per Se, you know no detail is overlooked. And if you’ve thumbed through his exquisitely detailed and daunting tomes such as The French Laundry Cookbook, let alone even try to cook from them, you know Chef Keller’s recipes take no shortcuts (and no prisoners). But accessible he will be. In his cookbook "ad hoc at home," Chef Keller brings us simple but beautiful recipes inspired by his more casual Yountville eatery, Ad Hoc. Read More
Asian BBQ & Grilling w/ Corinne Trang: Part 1 Features BBQ CTbites Team June 17, 2010 Corinne Trang is an award-winning cookbook author, Asian food historian, radio and TV personality. Lucky for us, she also recently moved to Westport. She is very serious about her BBQ…Asian BBQ that is, and she will be sharing her grill tips and recipes with us all summer. Here is her first installment including recipes for Five-Spice Soy Sauce Marinade, Grilled Bok Choy, and Mushroom Fried-Rice with Shitakes. I’m excited that grilling season is finally here. For me, it marks the end of a harsh Winter and wet Spring, and the beginning of the bright hot Summer ahead. It also means firing up the grill just about everyday from now until Fall. I think it’s fair to say that BBQ is all the rage these days. It’s been in the news for the last several years in a big way, and touted as a culinary tradition that can be as complex and refined as French or Chinese cooking, for example. I’ve tasted, seen, and engaged in lively and passionate conversations, and agree that barbecue is no small subject with regional variations to satisfy just about any palate. Read More
