Friday Froth: A First Look At The Hops Company in Derby Restaurant Beer Brewery Derby Burgers James Gribbon April 15, 2016 I was running late early on a Sunday afternoon when the obligatory traffic jam on I-95 caught me like doomed comet streaking toward the Sun and sudden annihilation. It took the sight of a wrecked Ferrari to remind me I'd forgotten my car. I was driving, yes, but the car I'd forgotten - like the aforementioned comet - was set in motion by gravity, not gasoline. Jack's Abby was hosting a pine car derby at The Hops Company in (quelle apropos), Derby, and I'd planned on making the campaign of my old car from Cub Scouts the B-story to this column. The lapse in memory had left me momentarily enraged until I remembered I'd just seen someone's red F430 Spider completely taco'd by the rear bumper of an 18-wheeler. Score one for perspective. The Hops Company is the work of Umberto Morale, who spent his early life in his native Rome before coming to the U.S. and bouncing between the restaurant scene, college, and Wall Street. Andrew Dominick of Food Dudes reports on Fortina's new Stamford "Pizza Surf Club." Remember when Fortina Stamford opened and they were supposed to open that sick rooftop that overlooks the harbor, but then it never happened? We do too. And it hurt, bad. Dreams of eating pizza while overlooking the water at sunset while thinking about life were shattered… but WAIT!!!!! Something is happening and it’s happening soon! The food will be different, and if you paid attention to their Instagram feed you may have noticed some eclectic items like hot dog tacos and stuff like bags of Doritos with jicama, carrots, cucumbers, candied peanuts, gummy bears, pickled pork skin, hot sauce, crema fresca, avocado, the obligatory Parmesan, sesame, and lime. That's a mouthful, and perfect drunk food. We've also heard whispers that they'll be whipping up fish sticks, Kobe beef corn dogs, and other super creative grub.That rooftop space will be Fortina Surf Club, basically a concept within (or on top of?) a concept, and it's going to be lit, homies. And with a name like "Surf Club," it's probably what you think it is...Tiki-style cocktails complete with little umbrellas? Yes. Millwright's & Bear’s Smokehouse Opening "The Cook and The Bear" Restaurant in West Hartford Restaurant BBQ West Hartford Emma Jane-Doody Stetson April 14, 2016 They say “birds of a feather flock together.” Chef Tyler Anderson of Millwright's in Simsbury and Jamie McDonald of Bear’s Smokehouse are proving that isn’t always the case. In August, the two will come together to open The Cook and The Bear in West Hartford’s Blue Back Square. The restaurant will make for an interesting meeting of the minds; Millwright’s is known for its farm-to-table cuisine while Bear’s Smokehouse serves classic finger-lickin’ Kansas City-style barbeque. “It’s a fun concept,” says AJ Aurrichio, Millwrights’ Operations Manager. “We’re taking traditional barbeque and putting a chef’s perspective on it.” They first started testing the idea of a merger in August 2015. Every Monday night, they offered pop-up dinners with dishes representative of what the new restaurant could entail. Diners were very receptive and they moved forward. “If you can’t beat ‘em, join ‘em!” laughs Aurrichio. Anderson and McDonald gave guests a sneak peek of the new concept at Savor’s Grand Tasting event, which took place in Hartford on April 7 and 8. They presented a “Smoked Pork Kimchi Pancake with Gochujang BBQ.” It was the perfect fusion of both elements- BBQ reimagined with gourmet view. Rothbard Ale + Larder: Westport's European Gastropub Restaurant Beer Gastropub German Westport Comfort Food Jeff "jfood" Schlesinger March 27, 2016 Rothbard Ale + Larder opened in Westport last November, the second restaurant by Chef Adam Roytman and his business partner, Joseph Farrell. The pair also own Walrus + Carpenter in Bridgeport. Roytman and Farrell’s original idea was to recreate a German beer hall, but as the concept of the restaurant progressed, the vision was slightly modified to design a restaurant that would offer comfort food based on the regional cuisines of central Europe including Germany, Belgium, the Netherlands, Alsace, Switzerland, with an occasional side trip to Italy. Access to Rothbard is a throwback to a 1920's speakeasy, with its unassuming side entrance leading to the lower level. Once inside, you are surrounded by a central European ambience, with its reclaimed wood and brick walls and cement and metal beams protruding from the ceiling. To the left of the entrance is a bar with several high-tables plus nine stools in front of antler-topped beer taps, plus a refrigerator that houses up to 45 traditional and unique European beers including Einbecker, Tripel Karmeliet, Del Ducato, Christian Drouin and Abbaye. Wine, aperitifs, an array of Schnapps and Absinthe are also available. With low-lighting illuminating the entire space, the atmosphere is very European gastro-pubbish. Read More
Rothbard Ale + Larder's Patty Melt Extraordinaire: Find It In Westport Restaurant Westport Comfort Food Burgers Jeff "jfood" Schlesinger March 22, 2016 The patty melt was introduced at Tiny Naylors in California in the late 1940s and since its debut, it has experienced an intense and loyal following throughout the country. Described by some as the love child of the grilled cheese and the hamburger, it is, at its essence a pair of beef patties, melted Swiss cheese, grilled onions, all served between slices of buttered-griddled rye bread. The Patty Melt at Rothbard Ale + Larder is a traditional interpretation with a few nuances. Two small patties were grilled and served between slices of buttered and griddled rye bread with caramelized onions, bacon, and melted Jarlsberg cheese. The bread was cut on the diagonal, and nestled inside each half was a mini-patty, smothered in its accompaniments. The thin patties were cooked to medium, still maintained a pink interior and were rich in flavor. The Jarlsberg cheese was thick, beautifully melted and delivered a wonderful level of creaminess and a deep, rich nuttiness. The caramelized onions were outstanding, sweet and soft from their low and slow preparation and when it intertwined with the mildly salty bacon delivered an incredible balance. People nervous about the bread versus bun…no need to worry, the buttered and griddled bread added great crunch and a delicious salty-butter flavor. Read More

It’s not been quite three weeks since Viengthong Charonesuk opened the doors to her newest restaurant. And, unlike so many other spots when they first get started, everything’s well under control. Even on a night when they were one person short on the waitstaff, they pulled everything off without a hitch. The restaurant, which now lies on Fairfield Avenue in Black Rock, opened its doors in 1982 by bothers Miguel and Louis Tomasio. Originally, Taco Loco functioned as a small taco shop located on Main Street. It served inexpensive Mexican Food late into the night. As demand grew, the business transformed from counter service to a full scale restaurant. In 1985 Miguel added a food truck and they moved to their present-day location in 1989. Since celebrity chef Geoffrey Zakarian opened The National several months ago at the lower end of Greenwich Avenue, I have received numerous emails telling me about its burger. On a sunny day I ventured to Greenwich, grabbed a table and ordered “THE NATIONAL UGLY BURGER” which includes Cabot Cheddar cheese, crispy Shallots, Ntl Sauce, and served with malt vinegar chips. I ordered it medium-rare. The burger arrived and it was served on a wooden cutting board, with a pickle speared through the top of the bun. The melted cheese was oozing around the edges, dripping towards the serving board. The sautéed shallots were peeking from under the cheese, partnered with the edges of a single lettuce leaf. If the taste was as good as the presentation, this would be a great burger. The burger was accompanied by the chips that were vertically arranged in a separate metal vase. Read More

Sneak Peek at INDIA in New Canaan: Chef Chirnomula's Newest Restaurant Restaurant New Canaan Indian Opening Jeff "jfood" Schlesinger March 08, 2016 The news that Chef Prasad Chirnomula was moving across Main Street to the building that formerly housed Boulevard 18 in New Canaan spread like wildfire throughout the culinary underground in Fairfield County. Locals who enjoyed his cuisine at Thali would once again enjoy the chef’s traditional and inventive Indian creations. What concept would the new restaurant entail? Would it duplicate the feel and cuisine of Thali. In an exclusive interview with CTbites, the celebrity chef gave his insight into his vision of the new restaurant, INDIA, from the new concept for the cuisine and the vibe to the exciting collaboration on the cocktails with mixologist Jessica Spector. With an anticipated opening date in mid-April, the chef is already developing a different feel for INDIA. When Chirnomula announced the closing of Thali, his landmark Connecticut restaurant, he was quick to mention that he was not leaving New Canaan, but was looking for a smaller, more intimate location.
