Our Catering Chefs are creatives at heart! They design menus, create recipes and customize events all year long. They have to constantly stay on top of food + design trends, to ensure that we give our clients a knockout party, every single time.
Recently, a client asked us to recreate the feeling of a sparkling French restaurants’ open kitchen. In a luxurious tent in Bridgehampton for over 200 guests, we did just that. We worked with Anthony Taccetta Designs to build a replica of a commercial chef’s kitchen (complete with subway tile and all), that felt like being in a restaurant with a brand new commercial kitchen. There were hanging pots, pans + tools over the work stations for that authentic feel. Guests could see the “performance” of each dish being prepped, chopped, cooked, plated and served by our culinary team of top chefs.
Our client challenged us to create a menu that would transport their guests to the closest Parisian dining experience they could have outside of France. An Amuse Bouche of Tarragon Pea Soup, an appetizer of Smoked Salmon with Caviar on Toasted Brioche, Crème Fraiche, Hardboiled Egg & Baby Arugula. Entree was a choice of Filet of Beef with Wild Mushroom Perigourdine Sauce or Herb Roasted Chilean Sea Bass with Potatoes Dauphinoise, Haricots Verts & Caramelized Shallots.
No French-inspired dinner is complete without a show-stopping sweet conclusion. We had handmade chocolates flown in from France. Guests had a choice of Meringue Tarts with Dark Chocolate Mousse, or the client’s favorite classic dessert of a Floating Island with Crème Anglaise with Wild Berries.
The evening was over the top, luxurious, delicious, and fun. We love working with our clients to create these personal moments, big or small, for their special occasions.
