Super Bowl Eats: Match Restaurant's Wing Recipe

Match Restaurant Wing Recipe
20 lbs wings cut for leg and winglet
Brine:
8qt water
1pt salt
1pt sugar
1. Brine Wings in mixture for 12-24hours
2. Drain and Dry
3. Rub the wings in the following mixture:
2oz garlic powder
1oz paprika
1oz Smoked paprika
1oz chili powder
1/4oz cayenne
½ lbs brown sugar
2oz red wine vinegar
2oz salt
1/2oz black pepper
1oz Worchester
4. Bake on flat pans for 20 minutes
5. Cool (or Freeze for Later use)
6. Fry till crispy and toss with 1 Part Franks Red Hot, ½ Part molasses, and ¼ Part butter simmered together
