M.EAT Organic Beef & Provisions Butchery Opening In Westport w/ A Custom Burger Bar

This spring downtown Westport will see the opening of M.EAT Organic Beef and Provisions, an old school meat market with new school fundamentals. Founded by Beto Esteves and Rodrigo Echeverrigaray, the business partners saw the need for a boutique organic meat shop. 

I sat down with the two in their Southport offices, eager to learn more about this concept. “There is no one in the US market involved with both the importing and the retailing organic meat, explained Beto. Generally, it’s a process that involves many, the importers, distributors and suppliers.  So by the time the organic product hits the shelf the prices are astronomical. We have the unique ability to source meat from Uruguay, Australia and New Zealand, directly from the producers. We decided that we wanted to be able to offer these products in the States. The partners decided to take this concept one step further and have a dedicated retail space specifically designed around these organic meats, a unique concept here in the states. The first of these locations is scheduled to open in Westport at the beginning of June.

I'll admit, I'm late to the party on these 100% organic, all natural, crazy town delicious marshmallows. I stumbled upon SmashMallows at Balducci's today, but as it turns out, they have been written up by In Style, Cooking Light and even People Magazine, They are quite simply, the "Dom Perignon of marshmallows." Balducci's is currently carrying them in Mint Chocolate Chi, Toasted Coconut Pineapple, Strawberry & Cream, and Cinnamon Churo.  However, if you look online, there are three additional flavors worth an order: Root Beer Float, Meyer Lemon Chia, and Espresso Bean.

Of the many immigrant groups that have shaped the state of Connecticut throughout the decades and centuries, the Polish have been among the most prominent. (And not just in New Britain!) On Main Street in Ansonia, across the street from the Europol Deli (where you can take home a full Polish dinner) is Eddy’s Bake Shop, where one can find one of the state’s most popular versions of the Polish delicacy, paczki (pronounced PUNCH-key). Resembling a doughnut, the paczki is traditionally stuffed with a filling, such as a jam or custard. So beloved in Ansonia and the Naugatuck Valley is Eddy’s paczki, that every February the bakery hosts a paczki-eating contest, in which contestants have five minutes to eat as many as possible.

Custom Meats, a 100% locally-sourced, traditional whole-animal butchery, is slated to open this spring at 1903 Post Road in Fairfield.

This next-door neighbor to Isabelle et Vincent French Bakery plans to serve non-GMO, nitrate-free, fresh meats raised on organic principles.

Sourcing beef, pork, lamb, and poultry from small farms in Connecticut and New York, everything will be cut and prepared in house, including dry-aged beef, sausages, and various prepared foods.  Farm-fresh local eggs, raw milk, and seasonal vegetables will also be offered.


Guinness™ & Two Roads Brewing To Collaborate on 2 Small Batch Beers

Guinness & Co., based in Norwalk CT, and Two Roads Brewing Company, based in Stratford CT, today announce two small batch beers brewed in collaboration and to be released in May of 2017. 

The first collaboration will be brewed at the Open Gate Brewery, St James’s Gate in Dublin, Ireland, and will be served to visitors of the Open Gate Brewery taproom. The second beer will be brewed shortly afterwards at Two Roads Brewing Co.’s brewery in Connecticut and will be served to visitors at the brewery.

This January marked 98 years since the start of Prohibition. The result: brutal enforcement, a public health crisis, loss of tax revenue, and the creation of modern organized crime, all evidenced the spectacular failure of the hated Volstead Act, and ensured its repeal in 1933. But from that January in 1919 - a time when even young people could remember the 1800s - all the way into the second decade of the 21st century, Fairfield County had not produced a single drop of legal spirits. Robert Schulten changed nearly 100 years of history when he opened Asylum Distillery in Bridgeport in May of 2016. Darien native and chef Peter Crawford is the culinary braun behind lower Fairfield County's newest destination butchery, The Darien Butcher Shop. The shop focuses on high quality meat and gourmet specialty products, as well as events and catering, not to mention hot pressed sandwiches if you're looking for a new lunch option.

New Canaan, Connecticut is excited to welcome an old fashioned butcher shop to its already impressive culinary offering. South Avenue Butcher is the creation of businessmen, long-term friends and Darien residents Dermot Flynn, Alan Griffin and James Farrell. The friends grew up in southern Ireland where rural towns would have a butcher shop and locals would go in for special cuts of meat and advice. The concept, which was inspired by a nostalgic chat at the bar, is a direct nod to their farming heritage and reinforces that consumers care about their meat source. They strongly advocate the community and have plans to support local town events.

The proper old-style butcher specializes in home-made sausages and burgers - they will even make some to a specific family recipe. Heading up the operation is Head Butcher, Michiel Hutten who hails from the Netherlands. He worked at Darien Butcher Shop, and has over 30-years of butchery experience. Inside the store he will serve prime cuts and order in specific meats. The meats are sourced from animals that are free to roam and will be organic wherever possible.

Friday Froth: Stone Brewing's Enjoy After 10.31.16 Comes Of Age

Fresh beer isn't always the best beer. As arguments for freshness go, you could make one for juicy, resinous IPAs, and you certainly don't want to drink any hot can of Busch Light which rolls out from underneath a car seat, but as the American craft beer industry matures, it's beginning to make beers meant to do the same. Stone, the Escondido, California brewer of undeniable arrogance, will shy away from claims of being the first to put "born on" dates on their bottles and cans, but they were the first to use "Enjoy By" as the actual name of a beer. The Enjoy By series of IPAs (followed by a date on each) was to be taken so seriously Stone would come and retrieve any unsold beers from retailers. 

This is why it was so interesting when Stone Enjoy After 10.31.16 hit shelves - in 2015. This week I opened the bottle I bought over a year ago. Here's what happened.


Two Roads To Build Second Brewing Facility & Tasting Room

Two Roads Brewing of Stratford has announced their plans to add a 25,000 square foot expansion to their brewery specifically to create sour and barrel-aged beers. Situated on 2.5 acres of newly acquired land adjoining the existing brewery's hop yard and music venue, the brewhouse will have a 120-person capacity tasting room overlooking both the brewing operations, and a wetlands preserve. 

Sour beers such as Framboise Noir Black Raspberry Lambic, Urban Funk Wild Ale made with yeast from Superstorm Sandy, and Worker’s Stomp White Wine Barrel-Aged Saison will see increased production, along with Hexotic Tropical Lambic, which won a gold medal at the Great American Beer Festival in Denver, Colorado this October. Hexotic spends 28 months in oak, and was fermented with "Brett C" (brettanomyces clausenii). Six different types of fruit were added during fermentation, including orange, passion fruit, mangosteen, soursop (aka gaunabana), guava, and mango.

CTBites had the opportunity to sit down with the mastermind behind the PieCaken, Chef Zac Young.  Creative and outgoing, it’s fitting that he came up with such a whimsical idea.  Young appeared on Top Chef Just Desserts, was named a “Top Ten Pastry Chef in America,” and currently serves as Pastry Director of Craveable Hospitality Group.  Here are excerpts from our conversation.
