What's New at Walrus Alley: Honing in on Hospitality Features Restaurant Westport BBQ American CTbites Team December 05, 2020 Like so many local restaurants in 2020, Walrus Alley in Westport has had to make quite a few changes to adapt to the new scene. Outdoor dining has been expanded. Custom-made accented partitions have gone up indoors. Family-style meals have been added to the take out menu. But instead of focusing on these actionables individually, the team behind Walrus Alley has been looking at the big picture: hospitality and really tasty food.“When this all began, we realized we had to stop reacting and really bring our restaurant to its core,” said Angela Farrell of the Walrus team. “We didn’t want to just make more takeout options, we wanted to test our menu items and include reheat instructions to ensure the guest is getting the best experience, even at their home.”And man, they made it work. With cult favorites like the The Notorious PIG family pack feeding 4, (baby back ribs, pork shoulder, brisket, smoked turkey, mac + cheese, baked beans, collard greens, cornbread, coleslaw, house pickles ) and new crowd pleasers like the Mom What’s For Dinner, featuring a full dinner with adult entrees, kids meals, and family-friendly sides, they’ve found a way to help us forget the present and focus on a great meal. Barcelona Wine Bar Launches CONSERVA: Online Specialty Foods Shopping & Lifestyle Site Features Ingredients Website Shopping Online Store Specialty Market pantry Global Cuisine Online Shopping Homepage Opening Stephanie Webster December 01, 2020 It’s always exciting to see a company whose positioning in the marketplace you have loved and respected for years, launch a brand that is such a logical extension of their business, that you almost have to say, why didn’t they do this sooner? Sometimes it takes a pandemic to have the time and space to look into the soul of your business and ask, what’s next? Barcelona Wine Bar has done just that with the launch of their new online specialty foods shopping and lifestyle website, CONSERVA.What is CONSERVA? Quite literally, Conserva are foods that have been conserved or preserved (either packed in oil, vinegar, or pickled). Barcelona Partner, Adam Halberg, broke it down for us. “During the Spanish Civil War, when people didn’t have access to fresh foods, they invented canning to take the abundance from the coast and farms of Spain and package them in bulk. This was their war time pantry.” In current day Spain, “conserva” is considered a high end specialty product, and diners can find bars throughout Spain and Portugal that exclusively serve canned goods (with a side of Vermouth, of course). Adam continues, “In high end restaurants, the last page of a menu will often feature food that quite literally comes out of a tin…and they are often the most expensive thing on the menu.” Read More
Bailey’s Backyard is Making Wood-Fired Pizza....And It's Delicious Restaurant Features Ridgefield Pop-Up Pizza Homepage Andrew Dominick November 25, 2020 After celebrating 21 years of serving the freshest, local, seasonal menu they can come up with, Bailey’s Backyard is switching it up.Oh, don’t worry, one of Connecticut’s originators in farm-to-table fare will still be doing that.Sorry for the scare. I had to get your attention somehow, didn’t I?Bailey’s, however, is doing something new. They’re making pizza.Past all the outdoor seating that stretches from Bailey Avenue to an outdoor tent by the rear parking lot there’s a custom-made Forza Forni wood-fired oven burning at 800° or higher. In front of said oven you’ll find pizzaiolo Frank Candullo, who has been in the business for “about 15 years.” Along the way, Candullo has worked in a few parlors, including Victoria’s Wood Fired Pizzeria in Bethel and he has made countless pies in his own backyard for friends and family. How Candullo ended up slinging pies at Bailey’s is simple. He’s really tight with Bailey’s owner Sal Bagliavio.“Our kids went to school together and we became good friends,” Bagliavio says. “Frank has been making pizza in his backyard for years and he always has a bunch of us over. We’d joke around back in the day that we should open a pizza place together. In fact, I owned Alphonso’s in Danbury for 2-3 years before I opened Bailey’s.”Combine the “what ifs” with a pandemic and pizza became a reality. Bagliavio mentioned that after he had to close the restaurant for a few months and geared Bailey’s more towards takeout. Pizza, he said, was the perfect pandemic pivot to offer as a standalone or you can mix and match with Bailey’s dinner menu.To prepare, Bagliavio and Candullo did some serious dough research. “We spent two days at Forza Forni in Brewster perfecting the recipe,” Bagliavio says. “I think we ate like 75 pizzas!”The result of what they learned at Forza Forni is a dough made up of all-natural flour, water, salt, and yeast, free of any chemicals or additives. It’s then left to cold ferment for 48 hours. If you’re thinking wood-fired Neapolitan after Candullo is done spinning it, you’re half right. Bagliavio calls it a hybrid. “It’s like a cross between Neapolitan and New Haven,” he says. “It’s got a char, a thin crust, and a puffy edge. It’s light.” Read More

Connecticut CBD Shopping Guide: Where To Buy CBD Infused Edibles & More! Features Ingredients CBD Chocolate CBD Shopping Edibles Buying Guide Homepage April Guilbault November 20, 2020 The world of CBD, or cannabidiol, is a wide and wild one these days-it’s going full-tilt boogie and there’s lots to learn about and even more to try. Plenty of myths and misconceptions swirl around this product (yes, it’s derived from the hemp plant but no, it won’t get you high). There are tinctures and drops and capsules filled with the extract, but here for the CTbites crowd, we’re going to focus on the stuff you can EAT: gummies, chocolates, honey, and even drinks. Along with these products, what is really great about the companies and stores selling them is that they also offer a wealth of information and are happy to pass along their knowledge. After all, these products are being used for everything from aches and pains, to help getting a good night’s rest to helping quell anxiety (hello, 2020). This previously stigmatized arena is seeing a great up-tick in activity because it’s looking like there is a well-spring of beneficial possibilities. Chef April Bloomfield is Cooking at the Mayflower Inn Features Restaurant Fine Dining Washington Litchfield Mayflower Inn Lunch Celebrity Chef Homepage Andrew Dominick November 15, 2020 A posh five-star inn located in “the country” of Connecticut may be the last place you’d expect to stumble upon a former two-time Michelin star chef doing her thing in the kitchen.Expect it. And expect to run into April Bloomfield.Yeah, THAT April Bloomfield. The April Bloomfield who won a James Beard Foundation Award for Best Chef: New York City in 2014. The April Bloomfield who owns the British gastropub The Breslin. And the same April Bloomfield of the now shuttered, but acclaimed West Village haunt, The Spotted Pig.And since mid-September she’s been spending her time away from the concrete jungle as the chef-in-residence at the Mayflower Inn & Spa where she’s firing up the refined pub fare that she is so lauded for and marrying that style with the bounty from local farms. If you visit—and you absolutely should—there are a few dining experiences to be aware of.There’s a seasonal, constantly changing four-course dinner tasting in the brightly lit, plant enshrined Garden Room. The $150 tasting’s polar opposite has been the occasionally offered bonfire experience where Bloomfield comes out to chat over cocktails, savory snacks, and gooey s’mores. Then there’s the meal I elected to have, a lunch in The Tap Room. If the weather obeys, it’s a great idea to dine out on the back deck that overlooks the Shakespeare Garden, equal parts beautiful and haunting on an overcast autumn day. Read More

Provisions On State Opens From Chef Emily Mingrone: New Haven's First Nose To Tail Butchery Features Restaurant New Haven Butcher Butchery Chef Meat Grocery Store Homepage Opening Chef Jes Bengston October 23, 2020 “If you don't like outstanding music, fresh chef cultivated sandwiches, farm and forest hand-picked produce, local artisanal product, NYC vibes, an incredibly friendly staff, and whole animal butchery then DEFINITELY do not go to Chef Emily Mingrone and Shane McGowan’s new Provisions On State,” says Chef Jes Bengston.Emily and Shane, owners of the award-winning “restaurant of the year” Tavern on State, in New Haven, decided to expand the brand and recently opened this sister spot just down the street from the restaurant, bringing an old school nose to tail butchery and a small grocery store to the East Rock neighborhood. As I took the two steps down into the store front ( like so New York I was like omg) I was immediately over taken with a vibe and energy that can only be created by this tag team duo who met by working together in a local restaurant in 2018, opened a restaurant in 2019, and now this. The store is so small I could lay eyes on all 4 walls at the same time but it took me 3 circles to absorb all the curated culinary greatness going on in here. Read More
