I ordered a pizza, they delivered an apizza, and they called it ah-beetz.

 

Pizza lovers in Connecticut know exactly what the word apizza means, and they also know that one of the best (if not the best) versions in the entire state is found at Roseland Apizza in Derby. On a recent Saturday night, we joined some friends and made the pilgrimage to the neighborhood that has had the privilege of protecting this pizza icon. We sampled three distinct combinations, each with three distinct personalities and three different tastes, all sharing one undeniable theme: perfection.

 

Before diving into our visit, it’s worth appreciating Roseland's roots. The story begins in 1935, when Giovanni “John” Scatolini, an Italian immigrant, opened a bakery and grocery store in neighboring Ansonia. He originally baked bread in a coal-fired oven in his backyard; a tradition he carried with him when he moved the business to Derby in 1938. World War II brought a family tragedy to the Scatolini family, when John’s son, Reno, was killed in the Battle of the Bulge in 1944.

Walk through the doors of Jeff Taibe’s izakaya, Bar Bushido, and chances are, you’ll be greeted by Kylie Keeley, especially if you’re sitting down at her bar.

Correction. One of her bars.

The pub part of Bar Bushido—where you’ll find yakitori, ramen, karaage chicken, DIY hand rolls, and other Japanese bar bites—is where Keeley says the “drinks match the energy.” The izakaya is a vibe; it’s loud (but with good energy), casual, and a great hangout for any occasion, and it’s where she’s rocking out a drink list of highballs, creative sake bombs, and cocktails ingredients (especially Japanese ingredients) that should spark your curiosity and tickle your tastebuds.

At the very back of the space is Bar Bushido’s alter ego, a quieter, more intimate hand roll bar, where Keeley’s cocktails are more focused on highlighting a certain flavor profile.

Mercato Italian Kitchen is a new favorite spot for inspired beverages, and they are newly open in the Farmington Valley serving drinks that are more fire than their pizza ovens (which both have names. I never knew pizza ovens had names.)

After doing a live creative session on Instagram with Bianca Giuliano, their bar manager and beverage curator, I was instantly intrigued by her ingredients and drinks that were based on classic cocktails, but with crowd pleasing twists and riffs.

The bar staff was just as enthusiastic and passionate about the menu as Bianca, so rest assured: you’ll get the full Mercato experience no matter which one you choose.

The Canton Location just opened its doors for dinner this week, and is a “must try” for anyone in the valley that loves amazing drinks (her 0%ABV menu ROCKS, by the way!) perfectly rustic wood fired pies, and great ambience. (SIDE NOTE: I had a great burger with burrata)

Would you rather have an adult beverage, or something alcohol free?

The answer is yes.

There’s a beautiful conundrum to ponder. Drinks without alcohol are being conceived, prepared and executed with the same level of care and thought as their boozy siblings, and sometimes more.

Ten years ago the cocktail's second golden age was in full swing, yet you still would have been hard pressed to find menus at upmarket bars focused on making cocktails without alcohol. The bartender could make you something sans booze, and it would be excellent. It wouldn't however have commanded the same research, preparation and attention as the items taking up real estate on the menu.

No-booze drinks were at best a kind afterthought, a little bit of bartender charity for those not able to imbibe. At worst, and far too often, they were the subject of downright shade and ridicule-when an order for a "fruity virgin drink " came in, you could hear the pretentious eye roll. There was mocking going on, but it had nothing to do with a drink. Mocktails were considered either a momentary novelty or a straight up waste of time.

BAD SONS Brewery Opens In Derby: Designed For Guests

First of all: Beacon Falls, Ansonia, Derby, Seymour, Oxford, Naugatuck, Shelton - in acronym, BAD SONS, collectively "The Valley." Once the manufacturing heart of an industrial state, the factories shut down to reopen out west, overseas, or not at all, but their brick shells remained. Once known for hats, watches, and artillery shells, there is new life to be found in old factories in the valley, which have become perfect incubators for the Connecticut brewing industry's baby boom.

The BAD SONS brewery inhabits a space in Derby just down the Housatonic river from the Yale crew team's boathouse, about 300 yds from the Dew Drop Inn. This coal-era brick monolith may be where "BAD SONS" comes to mean "Valley Beer."

Barbeque took a circuitous route to land in Connecticut. The root word, possiblybarbacoa, is reportedly Carib indian for cooking food on a raised grate over a fire. This, then, is Barbeque: the verb. You may hear people using the word this way as we approach the Fourth of July: "hot dogs, hamburgers, we're having a barbeque." Historically correct or not, I am not down with the verb: "barbeque" is a noun. It is meat - deeply, carefully smoked - and the goal is a harmonic balance of aroma and flavor, the joining together of fire and food.

The path to opening the new H'Cue Texas BBQ in Derby has as many twists, turns, stops and starts as the route to its spiritual home in Lockhart, Texas.

"When I was first looking for a location, I didn't even want a place with a kitchen." It's not what you expect to hear from the owner of a bar which has become more famous for food than its drinks. When Bronx-native Jay Carlucci bought the Dew Drop Inn in 2006, "I just wanted a neighborhood bar, I wasn't even looking north of White Plains." One major reinvention and many smaller renovations later, the Dew Drop is a linchpin of both the restaurant and social scenes in Derby, and a regular top three finisher in every list of the best wing spots in Connecticut.

"It was rough then, but it was definitely a local hangout, a neighborhood bar." His vision was to take the concept and make it better. Within the first few months every light beer was taken off the menu, and Carlucci heard about it: 'You're crazy, you didn't make money in the valley selling new beers.'

I was running late early on a Sunday afternoon when the obligatory traffic jam on I-95 caught me like doomed comet streaking toward the Sun and sudden annihilation. It took the sight of a wrecked Ferrari to remind me I'd forgotten my car. I was driving, yes, but the car I'd forgotten - like the aforementioned comet - was set in motion by gravity, not gasoline. Jack's Abby was hosting a pine car derby at The Hops Company in (quelle apropos), Derby, and I'd planned on making the campaign of my old car from Cub Scouts the B-story to this column. The lapse in memory had left me momentarily enraged until I remembered I'd just seen someone's red F430 Spider completely taco'd by the rear bumper of an 18-wheeler. Score one for perspective. 

The Hops Company is the work of Umberto Morale, who spent his early life in his native Rome before coming to the U.S. and bouncing between the restaurant scene, college, and Wall Street. He had the vision of an inclusive, German style beer hall in his head, and looked at properties all over the state before seeing the location in Derby and signing immediately.
