You’re visiting your favorite Neapolitan pizzeria. Almost always, the person “manning” the wood-fired oven is, well, a man. Shattering that mold is Alexandra Castro, whose love story with pizza began when she was a kid in her home country of Colombia. Making pizza in her youth, must have sparked something, because Castro went to culinary school, worked her way through the industry, and ultimately landed her locally at The Inn at Pound Ridge by Jean-Georges, and after that, as head chef at Pizzeria Magpie in Montreal, known for its Neapolitan pizza.

Fatto A Mano All Day Cafe & Market Opens TODAY in Westport

Westport, get excited. The highly-anticipated opening of Fatto a Mano is happening this Wednesday, February 12. If you’re not familiar with Fatto a Mano already, we’re guessing the name rings a bell. The Italian bakery moved to Westport about two years ago and sells at the weekly Westport Farmers Market and directly out of their kitchen space located at 971 Post Road East (next to Pop Up Bagels). 

The new storefront has been a long time coming for founder Pierluigi Mazzella, who originally started Fatto a Mano out of his home kitchen under the Connecticut cottage food operation license back in 2022. Since then, Mazzella has quickly made a name for himself and his artisanal bakery; Mazzella was named the 2022 Baker of the Year by the Connecticut Restaurant Association, his Panettone was featured on Martha Stewart’s Roku channel series, and Forbes even dubbed him the “Prince of Panettone.”

 Haven Hot Chicken, which brings Nashville Hot Chicken and “Not Chicken” to the area as one of the first fully dedicated Nashville Hot Chicken concepts in New England, today announced that it will be opening two NEW LOCATIONS in Fairfield, CT at 907 Post Road in Oxford, CT at Quarry Walk, later this year. 

When I asked the Haven Hot Chicken team how long it took them to arrive at this just about perfect combination of crispy, juicy and flavorful chicken, they laughed and said they have been recipe testing for over a year. The beloved New Canaan burger joint, Press Burger, has opened its second location in Wilton with even more delicious and creative eats. Co-owners Seth Leifer and John Gallagher set out to continue Press Burger’s mission as a delicious and fresh form of fast food, while expanding beyond its classic burgers and fries with new sauces, fried chicken sandwiches, the carrot dog (you’d be surprised how good it tastes), and more. As Leifer puts it, Press Burger is the Cava, Sweetgreen, or Chipotle of the burger world, a type of “cleaner, finer, fast casual.”

At the beginning of 2023, CTbites covered a new Latin American restaurant in Norwalk called Alma Bistro, owned by Alma Miranda and Ulises Jimenez. It was at Alma Bistro where my memory was jogged when Miranda mentioned that Jimenez, who wasn’t present on the day of our visit, is also the owner and head chef at Don Rene Taqueria in Milford.

Don Rene had been on my Windows Notepad program that serves a double purpose as a calendar where I keep a running list of places I’m interested in covering. I know, I’m so organized.

Three months after that article went live, I found myself kicking it with Jimenez at his super busy taqueria where Mexican tacos and apps are the canvas, but it’s also where Jimenez flexes his creative chops and blends in flavors from other cultures.

Jimenez, who’s from Mexico originally, opened Don Rene in 2021 in the growing Milford Downtown that already includes a Colony Grill location, Scratch Baking, Archie Moore’s, and the outstanding Strega.

"Suffer for your art” is the operative phrase when reviewing a hot chicken joint. From the roar of takeoff, to the turbulence, and spine-compressing jolt of landing, you know what’s coming because you’ve bought the ticket and taken this ride before. You can predict the future: it’s the opposite of gambling. In a new study researchers found gorillas will spin themselves until they fall over because getting dizzy is kind of like getting high to them, and that’s fun. Same goes for humans scorching our faces off via chicken breast. 

Occasionally on the rides we buy, something unexpected happens. It may be a “Yes, thank you for waiting: we currently have no idea where we sent your bags,” or it may be “So sorry, there’s a mechanical issue on your cross-Atlantic flight, and you’ll have to stay in a free room in Reykjavik for 24 hours and watch the Aurora Borealis.” Could go either way. Which is why it’s pretty cool to find an Indian/Nashville hot chicken smashup on Howe Street in New Haven.

Less than a year ago, we introduced readers to Stamford branch of The Taco Project, a fast casual Mexican restaurant whose roots began in Tarrytown in 2014.

Since April of 2022, The Taco Project and its brand grew even more outside of its existing Westchester locations (Tarrytown, Yonkers, Pleasantville, Bronxville) and its High Ridge Road spot in Stamford, as they’ve set their sights on the Florida market and opened up shop in Coral Springs.

In June 2022, Wilton resident Ben Pote opened Wildacre Rotisserie, a new fast casual concept whose signature is an expertly roasted heirloom chicken and an overall menu that’s all about freshness and quality.

This “Cali-style” chicken joint isn’t only bird-focused, though, as it’s got plenty in terms of vegetarian options—including a whole roasted za’atar seasoned cauliflower.

At Po-Yo, the savory focus should be easily guessed is you’re familiar with Peruvian cuisine and one of its popular dishes, pollo a la brasa. We even dig that the restaurant’s name teaches the masses how to properly pronounce “POLLO,” although, those who’ve watched enough Breaking Bad and Better Call Saul are likely well-versed in its pronunciation.

A little more than two years ago, Dennis Lake opened his fast casual, but gourmet approach to a taqueria right at the top of Greenwich Avenue. Now he’s taken his homemade blue corn tortilla tacos, Mexican side dishes, and margaritas to Darien’s The Corbin District with a second location of La Taqueria.

But don’t call it a franchise. Maybe don’t even ask him if that’s the plan, even if it does lend extremely well to damn near every city and town. Instead, Lake would likely prefer you call it a well thought out expansion.
