After 12 incredible years of partnership, Bill Taibe and Massimo Tullio are announcing a new chapter in their professional lives as they transition to pursue independent goals. The duo, known for their exceptional contributions to the culinary landscape, will part ways amicably and continue their legacies with individual ventures.

Effective immediately, Bill Taibe will take over the ownership and operations of Kawa Ni Westport and Kawa Ni Denver. At the same time, Massimo Tullio will assume ownership of The Whelk and Don Memo, both located in Westport, CT.

Walrus Alley owner Joe Farrell has made the move to exclude all seed oils from his menus and, he’s getting quite the education. Only a week into the experiment he’s learning on the run. The popular Southern food & burger go to in Westport is now cooking with grass fed beef tallow and avocado oil. Yep! And Joe’s committed to staying the course despite the learning curve. Sure, he’s always done that popular fried chicken in tallow, used duck fat too. But it’s the fries they’re fighting with. And he and the crew are fighting a worthy fight.

Walrus Alley uses a special potato for their fries and that’s just the beginning. “Cooking with Tallow & avocado oil is a new experience. We’re starting from scratch,” Joe revealed. “And we are doing this while we are open!”

Happily, eating plant-based is becoming easier and more accessible by the day. However, finding decadent desserts and sweets that fit this category have historically been a bit more of a challenge, given that milk, butter, and gelatin is usually involved when making things of the sweeter persuasion. Another challenge: finding gift-worthy artisan treats that are visual treats to the palate as well the eyes. You know, the type of special giant heart box of chocolates that Linus toted around waiting to give to Miss Othmar. At the end of the day, no one wants to be left out, including sweet and chocolate-indulging plant-eaters.

Well, these sweets do exist, Virginia, and they are located in Manchester so your plant-loving special someones can partake in all the sweet flavors and beautiful treats as the omnivores. Every sweet produced at Divine Treasures chocolate shop, which has been going strong since 2007, is vegan and gluten-free. In addition, Divine Treasures confections are made with health and enjoyment in mind. These European-style chocolates are crafted with high-quality ingredients but also, and here’s the amazing part, without refined sugar and corn syrup. Diane Wagemann, owner and chocolatier, studied the art of chocolate making in Belgium and Switzerland and then decided to adapt her grandmother’s family recipes to suit the goal of healthier eating. Instead of adding an abundance of sugars, Wagemann wants the inherent taste of the cacao to be the shining star. She sources the chocolate from small family-owned Fair-Trade certified businesses, so you can be sure that no fillers have been added to the chocolate, which sometimes can compromise the vegan integrity. 


CT Chefs & Restaurant Win Nominations For James Beard Awards 2023

James Beard Foundation announced the semifinalist nominees for the 2023 James Beard Awards today in a press release. Nominees will be announced on Wednesday, March 29, and winners will be celebrated at the James Beard Restaurant and Chef Awards Ceremony on Monday, June 5, 2023, at the Lyric Opera of Chicago. 

We are thrilled to report that two Connecticut chefs and Peruvian restaurant, Cora Cora, have been nominated for James Beard Foundation awards, one of the highest honors in the culinary industry.

Renee Touponce of Oyster Club and the Port of Call in Mystic as well as Christian Hunter of Community Table in Washington were nominated as semifinalists for the Best Chef Northeast award. Cora Cora, located in West Hartford was nominated as a semifinalist in the Outstanding Restaurant category.

Eat Justice: Mecha Noodle Bar Creates Program To Help the CT Community & Promote Caring

“Profit matters, but people matter more.”

That’s the motto of Tony Pham, owner of Mecha Noodle Bar. It also happens to be the guiding principle of Eat Justice, an initiative created by Pham alongside co-founder Richard Reyes. The project involves a network of Connecticut businesses who turn portions of revenue into monthly donations to local and international nonprofit organizations. “But it’s more than just a check,” Pham tells me. “We’re trying to create a movement.”

The Eat Justice model is fairly simple: businesses designate a selection of goods to serve as their Eat Justice ‘fundraisers.’ They then raise the price of these goods by just fifty cents, and, for each one purchased, they reserve that extra fifty cents for a monthly donation. For example, at Mecha Noodle Bar, each purchase of a ramen dish increases the restaurant’s Eat Justice funds by fifty cents. While customers barely notice the fifty cent price difference, by the end of the month, Mecha regularly raises nearly $20,000 for charity. Pham points out that, by baking the donation into the price of a menu item, Eat Justice avoids the awkwardness and ineffectiveness of directly asking consumers to donate towards a cause.


Breaking News: L'escale to Remain Open at Delamar Greenwich Harbor

Following the announcement this past summer that the popular French restaurant L'escale would close its doors on November 30th, 2022, after 20 years in business, L'escale restaurant and Greenwich Hospitality Group, owners of Delamar hotels, announced today that it will remain open. Greenwich Hospitality Group will operate the restaurant at the Delamar Greenwich Harbor Hotel under a new licensing agreement. After 22 years of wowing Tri-State area restaurant goers, Bernard and Sarah Bouissou are closing the doors of the beloved Bernard’s to undertake their next culinary endeavor. Since opening in March of 2000, the elegant French restaurant and wine bar quickly won the heart of Ridgefield, CT, stood the test of time, and became a truly iconic dining scene. Their legacy will continue in the Ridgefield area through the esteemed Sarah Bouissou Catering and a new prepared food storefront that brings Bernard’s fabulous food to your family’s table.

Meeting as chefs under Daniel Boulud at Le Cirque in the 1980’s, the gourmet power couple led accomplished careers in New York City. Following their dream to raise a family in the country, they settled down in Ridgefield at 20 West Lane. For more than two decades, Bernard and Sarah raised their four daughters there, while gracefully operating the restaurant and catering business. As one can imagine, dedicating all of your nights, weekends, and holidays to your business is no easy task.

They did not want to pass the torch to just anyone, they wanted to make sure the next owners would persevere as a pillar in the community. They found those ideal new owners in local restaurateurs Dave Studwell and Rob Moss of Washington Prime; and B.J. Lawless, of BJ Ryan’s Restaurant Group, all in Norwalk, CT.

To truly depict the joy I feel around Bridgewater Chocolate finally opening a storefront in Southern Fairfield County, after over 25 years in business up North, I may need to quote myself from a previous 2021 CTbites article. I feel the same way, biting into one of their outstanding toffees or coconut igloos today, as I did a year ago, but now, I can hop in my car and grab a box, because their confections are available at their new Westport location, opening September 15th.

With locations in Brookfield and West Hartford, Brand Director, Marlene Steiner says, “Westport’s retail experience will be the blueprint for their flagship stores moving forward.” The customer will be introduced to product in new ways, with clean modern lines, an expansive “build your own box” display, and for the first time ever, a dedicated tasting area at the front of the store. For centuries, the seafaring industry was dominated by men, and the presence of women on board was considered bad luck. In Mystic, CT, a town with a storied maritime history, The Port of Call, a new nautical-themed cocktail lounge, is giving a nod to the area’s seafaring traditions while also looking to the future. That future includes three Queer women who are “steering the ship” at The Port of Call: executive chef Renée Touponce, beverage director Jade Ayala, and general manager Nancy Hankins.

To celebrate a new era of inclusivity and gender diversity in a fun and welcoming environment, the trio has announced Sea Queens, a summer-long bi-weekly dinner and drag show that will run from Memorial Day through Labor Day. Starting Sunday, May 29th, and kicking off Pride Month, guests can book a seating at 6:30 p.m. or 8:30 p.m., where they’ll enjoy a choice of two dishes from the inventive menu along with a cocktail, as well as an incredible drag show by some of the best Queens in the region. Then, at 10:30 p.m., the fun will continue with a disco after-party at Dive, the lower-level casual bar.

At a small shop on Church Lane where chocolates are both made and sold, a Westporter who worked in the health industry during the chaos of the pandemic is finally realizing her sweet dream.

“We just need a little bite of happiness,” chocolatier Laureen Haynes said of the deluxe chocolates she makes herself. “That’s what I’m bringing to the community.”

The Chocolatieree — the shop’s name is a combination of chocolatier, or someone who makes chocolate, and “Ree,” the owner’s nickname — is located in a small building at 66 Church Lane, which previously housed a dog groomer, then a jewelry store.

The front room on a recent weekday featured a display case of hand-crafted chocolate treats: coffee caramel, sunflower seed butter cup, coconut ganache, sea salt caramel and blueberry lavender ganache.

In the back of the shop is a kitchen, where chocolate was swirling around in a tempering machine, to give the candies the smooth luster that makes them gleam.
