"Crudo 3 Ways" Recipes From Match Restauran

Match Crudo Recipe

1lb of your favorite fish to eat raw (Tuna, Hamachi, Fluke, Bass or Maybe Salmon)

1/4C of Extra Virgin Olive Oil

3 Cloves of Garlic

Pinch of Maldon Salt

Pinch of Cracked Black Pepper

1 Bunch of Basil

2 of your favorite stone fruit in the summer or citrus in the winter

1 bulb of fennel

2 Shallots

1 Carrot

  • Section the citrus or dice the stone fruit (save the juice that spills out)
  • Julienne the basil
  • Shave the fennel paper thin
  • Sliver the garlic and toast gently in a little bit of the olive oil to make chips
  • Cut the shallot and carrot into a brunoise or tiny dice
  • Slice the fish in a sashimi fashion
  • Arrange slices on the plate and drizzle with olive oil
  • Place a small amount of shallot and carrot on top of each slice and top with a garlic chip
  • Arrange a little fennel and basil on the plate and place a few segments or stone fruit pieces in the empty space on the plate
  • Season with salt and pepper
