Fairfield Cheese Co. Launches Cheese School of Connecticut

Just in time for back to school Fairfield Cheese Company announces the re-launch of their popular Cheese School with a robust class schedule sure to please the most eager student. “Our classes have been hugely popular since we opened four years ago, so we decided to expand our offerings and give the Cheese School its own identity within our brand,” said owner Laura Downey. The Cheese School of Connecticut seeks to be the pre-eminent cheese school in the State. “We’ve invited some great speakers to join us as well and have expanded our reach,” she continued. “Classes like these are available in New York City, so why travel?” added co-owner Chris Palumbo.

Tuesday, October 8th 7-9pm: Cheese 101

Are you a cheese lover? Do you want to know more about it? Cheese 101 is the place to start. Sit and relax over a plate of some of our best cheeses (with a little wine to wash it down, of course) as Laura and Chris bare the basics. We’ll guide you through a scrumptious tasting of fresh and bloomy cheeses, washed rind and aged, plus a variety of cow, sheep, and goat cheese, all while learning about cheese-making. Leave with your new-found knowledge and order with confidence the next time you’re at a cheese counter.  $45

Monday, October 21st 7-9pm:Oktoberfest Cheese & Beer with Brooklyn Brewery

If you can’t make it to Germany’s annual Oktoberfest this year, why not join us for our own celebration of Fall? John Williams, Certified Cicerone from Brooklyn Brewery will be joining us as we pair some great cheeses with some great beers from the Brooklyn Brewery lineup. $45.00

Tuesday, October 22nd 7-9pm:The Honey Connoisseur, a Cheese & Honey Pairing Class & Book Signing

Marina Marchese beekeeper, author, and owner of Weston’s own of Red Bee Honey will introduce you into the secret world of the honeybee with a very sweet class. We will pair each of her single-origin nectar honeys with a different artisan cheese and Marina will also be available to sign her latest book, The Honey Connoisseur. $50

Tuesday, October 29th 7-9pm: Our Report From The Slow Food Cheese Festival

People always ask us have we traveled to Europe for the shop yet? Well this Fall we finally will. Slow Food's biennial event known as “Cheese” is held in Bra, Italy the birthplace of the Slow Food Movement and is dedicated to cheese. It brings together hundreds of the world's best cheeses and their producers, as well as experts, cheesemongers and cooks. Chris and I will present our findings from Bra with a slideshow and of course a tasting of Italian cheeses and wines. $45

Tuesday, November 5th 7-9pm: Perfect Pairings, Cheese & Wine

Every so often, we find pairings of cheeses and wines that go above and beyond, complementing each other in a way that can only be described as "Marriages-Made-in-Heaven.” In this class, with the help of our friends at Harry’s Wine & Liquor, we will pair the perfect cheese with its perfect wine match and discuss the basics of pairing  cheese with wine. $45

Tuesday, November 12th 7-9pm: The Village Dairies of Switzerland

This class is an in-depth look at the Swiss, Alpine, and German traditional dairies that are the epicenter of spectacular cheeses. The production, protection, and culture will be discussed as we taste the cheeses and finish with big pots of fondue for everyone and Swiss wine for all. Jonathan Richardson of Columbia Cheese is our special guest. $45

Tuesday, November 19th 7-9pm: Which Beverage is Cheeses’  TRUE Champion?

Which is cheeses’ true champion? Will the wine lovers lay down their stems in defeat? Will the beer lovers cry in their beer? What better way to find the answer than to put them head to head in a cheese eating, wine drinking, beer guzzling battle? We will go five rounds, pairing a cheese with a beer and a wine. Which works better? You will decide with your vote. May the best libation win! $50

Tuesday, December 3rd 7-9pm: Cheese & Chocolate with Mast Brother’s Chocolate

Indulgence in great food and drink around the holiday season is nearly universal and tonight we do it right! Mast Brothers is an American Craft Chocolate company in Brooklyn that is completely bean to bar. That means they source the raw materials and make the chocolate and then make it into bars. They are making the trek to the burbs to talk about their chocolate and help us pair up the perfect cheeses. We’ll be pouring a little bubbly to wash it all down. It will be a rather indulgent evening so let the holiday season begin! $45.00
