This recipe can be made with regular, conventional orange carrots, but spring-dug rainbow carrots from the farmer’s market are a colorful celebration of time and place like no other. Seasoned with a pistachio dukkah (an Egyptian nut-herb-spice blend traditionally made instead with hazelnuts, plus sesame seeds, coriander, mint, cumin, and salt and pepper), the flavors are both unexpected and familiar. Crème fraîche, with its creamy, sour finish is the icing on this proverbial carrot cake. Fresh microgreens complete the dish, offering more visual and textural contrast.—Lauren Braun Costello
Chefs realized a long time ago that “farm to table” was more than a phrase, it was a healthier way to eat, tasted better and improved the diversity of local economies by helping make farming economically viable. In addition, this growing trend has another major benefit, increasing access to a wide range of different food options across our community.
We, in Connecticut, are incredibly lucky with access to a large and growing number of farms and farmers’ markets, but sometimes a visit to that local farm stand during its business hours is difficult. For people who are not members of a CSA (community supported agriculture) program and would still like to incorporate ultra-fresh products into their everyday lives, CT based Berkshires Direct now gives customers greater access to the resources of farm-fresh products delivered to your home. They are based in Connecticut and currently making deliveries in Connecticut and NYC (Manhattan, Brooklyn, Queens).

About a year ago I was invited to a press event at Tony’s at the J House in Greenwich, Connecticut which I covered for CTBites here. So when we were recently invited back to experience the new Miku Sushi Pop-up I was delighted.
The owners of MIKU SUSHI K Dong, and Chef Steve Chen, have created a special partnership with Tony Capasso, managing partner at Tony’s at the J House, to launch an all-new “elevated” sushi bar at the upscale steakhouse.
The MIKU x Tony’s pop-up is led by Executive Chef Joe Liu, former head sushi chef at Tao and Masa in Manhattan. The special menu features many of MIKU signature rolls as well as two new rolls, exclusive to Tony’s. The Tony Roll is made with bluefin toro, avocado, scallion and spicy lobster salad, and J House Roll with king salmon, avocado, wasabi sesame and spicy yellowtail.

The menu soft-launched this week and features almost a dozen of the MIKU signature rolls including two new exclusives, Tony Roll made with bluefin toro, avocado, scallion and spicy lobster salad, and J House Roll made with king salmon, avocado, wasabi sesame and spicy yellowtail.

Earlier this week a few of us from the CTBites team made our now seasonal pilgrimage to Prime in Stamford. This time to experience the restaurant’s new TASTING menu.
The summit of cuisine at Prime, the TASTING series is a re-imagined experience in dining. Small tastes are presented in a unique rhythm and play to Chef’s sensibilities on a weekly basis. In what feels like a restaurant within a restaurant, TASTING places you in the inner sanctum of the kitchen, with the Chef as your guide. The four course TASTING menu is a truly unique table experience.
Wine or beer dinners in Fairfield County are common, but cocktail dinners? You don’t see very many (if any) offered on a regular basis. About a year ago, Chris Geideman, the owner of Crew Restaurant in Greenwich, along with Andrew Hellman, CEO of the Norwalk-based barware company Teroforma, started to discuss a cocktail dinner event of their very own.
The idea would feature Teroforma’s 1pt Blends, a line of flavor kits that enable anyone from experienced bartenders to at-home amateurs to infuse spirits minus all the guesswork. Teroforma is a local CT company that creates all-natural, gourmet infusions for cocktails. After a bunch of casual conversations, they figured out a way not only to make it happen, but to make it something more than simply drinking and eating.
Kombucha is delicious and nutritious! Cross Culture Kombucha Taproom & Brewery will teach you how to make your own at home in their Kombucha Homebrewing Workshop on November 21.
Let’s be real. Dining out is always a treat. You don’t have to clean up afterwards, and if you’re like me, the menu at almost ANY restaurant is going to surpass what’s going on in my own kitchen. However, if you’re a diner who appreciates experiencing the mind of chef who is executing dishes that are inspired by the season, an “aha” moment, or a desire to experiment, a Chef’s Tasting is the way to take dining to the next level.
It was with this in mind, that I attended Chef Carlos Baez’ monthly Chef’s Table Tasting Dinner, held on the last Thursday of every month at The Spread’s Greenwich location.
One of the ways to celebrate Filipino American History Month (every October) is with a kamayan meal. A what? Don’t worry, when I was asked to attend one, my response was, “What’s that now?” And I do have a few Filipino friends, including those who invited me to this one, my first one.
There was a kamayan dinner and it was held in South Norwalk. The event, hosted by Chris Gonzalez of Hapa Food Truck with public relations pro and event planner Ria Rueda, was the first of its kind in the area, not counting the off chance you’ve attended one at a friend’s house.
At Sherkaan’s first pop-up last Thursday night, the Flipindian Feast, I had to swim through the the hungry crowd and make my way to, literally, the last seat available at the long copper bar. From the pervading tiger logo (Sherkaan means Tiger King in Hindi) and hindi phrases on the walls, to the cascade of bicycles hanging from the ceiling, diners are definitely transported to the packed spaces of a Southeast Asian hot spot. In addition to all the things to look at, pungent spices filled the room; they were so entrenched in the air that my hair smelled of them the next morning.

If you were fortunate enough to try Geoff Lazlo’s food at Mill Street Bar & Table—or at The Whelk and LeFarm prior to that—you know to expect fresh, seasonal food from the restaurant chef turned private chef and caterer. With his latest endeavor, Geoff Lazlo Food, he’s popping up at venues all over Fairfield County and beyond. These days you’ll catch Lazlo flashing his skills at places that practice and preach sustainability like Mike’s Organic Delivery, The Hickories, Millstone Farm, and he even returned to cook at one of Gramercy Tavern’s 25th anniversary alumni nights where he was a sous chef for four years.
Exclusivity when dining out has a way of making us feel special. The smaller, the better. It’s like being part of a special club. It’s cool knowing that at that very moment, in a space half the size of a normal living room, that you and 20 people are the only ones that get to take part in an intimate dinner.
Most often the problem is that “exclusive” equates to “EXPENSIVE.”
That brings us to Greenwich! Wait, before you think this is going to be some $150 per person affair, you’re so very wrong.
What if I told you that there’s a great four-course tasting menu offered on the first Friday and Saturday of every month for $65?
If eating out is your thing, I bet you’d be intrigued. What am I saying? It’s Fairfield County, of course eating out is your thing.
Would it be crazier if I mentioned that it goes down at a luxury lifestyle boutique store? And that it’s BYOB? Bet you didn’t see those swerves coming.
