Smoking Again: Pitmaster Leland Avellino Opens Takeout-Only Avellino Family BBQ

Features Interview BBQ Pitmaster Norwalk Homepage Comfort Food Catering

Andrew Dominick

Leland Avellino is a name that might be familiar to local BBQ enthusiasts. Even if you can’t recall, there’s a good chance you ate at the Stamford branch of Dinosaur Bar-B-Que at least once. Avellino, who was a partner, didn’t only open that location in 2012, he went on to become the company’s corporate executive chef before he transitioned away from that role to return to the BBQ pits in Stamford because as he puts it, “I met my wife, had two kids, and life on the road wasn’t good for that, so I came back.”

When Dinosaur Bar-B-Que Stamford decided to pull the plug in June 2020 due to COVID-19, Avellino got antsy. He wanted to feed people clamoring for his smoked meats and he needed to get back to work to feed his family.

“I was sitting home, I was bored, and I wanted to feed my people,” he says. “I bought this 500-gallon converted propane tank smoker on a whim. I looked at tanks in Texas, Kansas, I talked to pit bosses all over to find a good one. I bought this one (built in Austin) locally from a guy who was going to do something in Greenwich, and he didn’t because of COVID. I bought it without telling my wife! I pulled the trigger, and boom! Here we are!”

The “here” is in the Glenbrook section of Stamford, at 47 Larkin Street, past Lock City Brewing and Marcia Selden Catering, at ONTHEMARC Events where Avellino uses a commercial kitchen space and parks his smoker by the front door.

At Avellino Family BBQ, he’s not doing the same ‘cue he did at Dino.

Berkshires Direct: Farm-to-Consumer Delivery To Your Doorstep

Features Ingredients Subscription Box Farm to Table Farm Fresh Farm To Table Delivery Service

Stephanie Webster

Chefs realized a long time ago that “farm to table” was more than a phrase, it was a healthier way to eat, tasted better and improved the diversity of local economies by helping make farming economically viable. In addition, this growing trend has another major benefit, increasing access to a wide range of different food options across our community.

We, in Connecticut, are incredibly lucky with access to a large and growing number of farms and farmers’ markets, but sometimes a visit to that local farm stand during its business hours is difficult. For people who are not members of a CSA (community supported agriculture) program and would still like to incorporate ultra-fresh products into their everyday lives, CT based Berkshires Direct now gives customers greater access to the resources of farm-fresh products delivered to your home. They are based in Connecticut and currently making deliveries in Connecticut and NYC (Manhattan, Brooklyn, Queens).

45+ CT Caterers, Restaurants, & Sports Bars for Super Bowl 2021

Features Restaurant Super Bowl Catering Roundup Homepage

April Guilbault

Instead of the usual sports equipment, players, and fans, Super Bowl 55 will also be brimming with masks, wipes, sanitizers and safety cards this year. The stadium will be 1/3 full and sitting next to those real folks will be cardboard cutouts of more “fans”. Where is Flat Stanley when we need him? We can only hope a flat Bernie will be somewhere in that crowd. Pandemic aside, one bit of equipment for *any* Super Bowl remains the same: food. And lots of it. Crammed in a stadium or at home with just your pod, food reigns supreme on Super Bowl Sunday and Connecticut eateries and caterers are offering great packages for you (and Bernie. And Stanley). So eat up, cheer loud, and thank the heavens above that there are only cardboard cutouts of fans, not food!

As you can see with just a small glance, the Holiday list before you is a long one-one of our longest—but it serves a dual purpose: to keep you, our fabulous readers, happy, safe, and cozied up with your families and “pods”, but it also serves to help us be aware of the restaurants in our midst who are going above and beyond to simply make it through this year and greet the new one. We hope you will continue to support each other and support the businesses in our state which help to keep our communities thriving. Geoff Lazlo Food: Chef Driven Gourmet Food Delivery To Your Door Daily

Features Ingredients Delivery Service Home Delivery Catering To-Go

Stephanie Webster

Chef Geoff Lazlo has been cooking delicious locally sourced, elevated comfort food for years in Fairfield County. CT diners will remember him from Bill Taibe’s The Whelk in Westport, and most recently from the very popular Mill Street in Greenwich, but he also spent time at both Gramercy Tavern and Blue Hill Stone Barns. When I got on the phone with Lazlo last week to discuss his new chef driven gourmet food delivery service, I had to laugh when I asked “what’s going on chef?,” and he replied with “honestly I don’t even know anymore.” Restaurants and chefs across the state have had to be nimble and do some pivoting to stay relevant in the current pandemic economy, and Lazlo is no exception. “I’m always figuring out the next thing to do, and I’m always thinking about moving forward,” says Lazlo. That forward motion propelled him to launch Geoff Lazlo Food, serving Fairfield and Westchester Counties, and giving food-lovers the opportunity to enjoy hand-cooked meals in the comfort of their own homes.

What is it about fire? For most of human history, cooking over an open fire was the only way to cook a meal. Now, fire is just one technique in a chef’s culinary toolbox, but is one whose process and taste feel nostalgic, beautiful, and pure.

Enter the master of all things FIRE, Chef Dan Sabia, who established Wood Fire Food catering and events in 2018 with a desire to cultivate deeper connections between food producers and eaters by blending his passion for design, Argentinian open fire cooking, community, and localized food, to transform the dining experience. His mission has always been to create an immersive and interactive experience where diners cultivate connections to their food, the chef, and each other. And now Chef Sabia is taking it one step further.

In the Covid era, where events and live cooking classes have been all but eliminated, and indoor dining remains at reduced capacity, Sabia is bringing a new dining experience to CT, with all the comforts of HOME.

Turning Sap Into Syrup At Ambler Farm's Tap-A-Tree Program

Ingredients Features Farm to Table Local Farm Ingredients kids activity Kid Friendly

Natalie Levitt

It was a warm February morning and my son and I joined a group of families as we gathered at Ambler Farm in Wilton, CT to kick off the maple sugaring season. We were greeted by Program Director Kevin Meehan and received an introductory lesson on how to tap a maple tree. Most of us stood in awe as the sap started to drip out of the tree upon tapping it. Many cheered with excitement for what was about to begin was a fantastic winter farming adventure and a great lesson in farm-to-table. We then received our buckets from Assistant Program Manager Jennifer Grass and proceeded to carefully select our “Giving Trees” on the farm. We hung our buckets on the trees and captured photos to commemorate the day. (Our tree was number 42 and pretty far from the sugar shack! It was an adventure after all!) Then we waited. We waited a week. During that week, many of us wondered just how much sap we would find in our buckets when we returned to the farm.

Taco Co. Tequila Cantina Opens in Shelton

Restaurant Openings Shelton Mexican Tacos Breakfast Lunch Brunch Cocktails Catering

Stephanie Webster

Taco Co Tequila Cantina opened last week in Shelton, bringing a little bit of Mexico City to our fair state of CT. Owner, Kurt A. Popick (also owns Prime One Eleven), inspired by a trip to Cabo, rounded up a culinary team to bring that Mexican street food vibe to life in Taco Co. With the help of Chef Matt Storch, who consulted on Taco Co.’s menu development, the vibe is playful, tasty and well…boozy. With over 90 types of Tequila, hand crafted cocktails, and their signature Frozé Cuervo, Taco Co. is definitely a party. What are we especially excited about? Taco Co. is making their corn tortillas fresh in house daily, and Storch’s taco list, which includes all the classics, is rounded out with some truly creative takes on the ultimate Mexican wrap. We’re talking about Chicken & Waffle tacos, Lobster, The Greek (with ground lamb & feta), NY Strip with chimichurri, and crispy Peking Duck, to name a few. Mhmm. Pair your tacos with a platter of sizzling Fajitas, Cheesy Road Corn or Cabo-Style Ceviche, and you’re in for a good night.
