Chef Adam Roytman Takes Over Bar Sugo in Norwalk...And It's Delicious!

Restaurant Norwalk Italian Cocktails Bar Pizza Pasta Homepage

Andrew Dominick

Just over a year ago, Bar Sugo quietly changed hands. Change, even if it happens slightly under-the-radar, can be either good or bad, but in Bar Sugo’s case, change is reinvigorating. I’m reluctant to say something like, “Bar Sugo is back!” because the reality is, it never left, it’s just kind of different.

In this case, different is good, and this is an appropriate time for Bar Sugo’s reintroduction. Bar Sugo’s newness starts with its new owner, Adam Roytman. Some of you might know Adam as a former partner at Walrus + Carpenter and Rothbard Ale + Larder. At each, he was the opening day head chef, and chances are you saw him occasionally tending bar as well. Dubbing him a jack-of-all-trades restaurant guy is a proper description.

Chef Dan Kardos Rolls Out Liberty Rock Tavern Food Truck

I visited Liberty Rock Tavern in Milford shortly after they opened, and I distinctly remember Dan Kardos’ description of his menu, “I’m making food that people like to eat, food that I like to eat,” he said.

That “food” is best described as elevated pub grub, which could be surprising to those who followed Kardos’ stints at Napa & Co., Le Farm, and various Barcelona locations. His fine dining background ultimately results in better bar food. It’s the kind of food made for cheat day, where you’ll have to roll up your sleeves, and sit as pulled up to the bar or table as you can get. It’s successful stuff.

What do you get when you mix cooking traditions of both the Italian and French? The best of both worlds at ROÌA Restaurant in New Haven. It’s a culinary combo that doesn’t require you to renew your passport.

Located in the former Taft Hotel that dates back to 1912, ROÌA Restaurant and Cafe has historical charm. Step inside and you’ll see what we mean with its two-floor open design with ornate ceilings and impressive columns. The building is truly an architect’s dream. But you don’t have to be a designer to appreciate all that ROÌA has to offer. You just have to be hungry.

As city-bound commuters dash to and fro’ and the pulse of the city continues to thrive, the Port Chester railroad station, a landmark since 1890, stands as a symbol of where we’ve been and where we’re going. Today, this turn of the century building is home to Our House Restaurant Group’s newest venture, Station House. In keeping with this dynamic restaurant group’s approach to hospitality, as seen with their popular Rye House Port Chester and Manhattan taverns, and last year’s mega outdoor hit, Village Beer Garden, Station House offers that same neighborhood vibe, this time, it comes rooted in history and coal-fired pizza.ctb

Robert Atkinson is impatient with Mother Nature. The 12 vegetable beds beneath the patio of the Barcelona Wine Bar & Restaurant in Fairfield are awaiting the seeds for their sixth year of providing homegrown ingredients to the Fairfield restaurant’s kitchen, but the New England weather has not been cooperating.

This will be the sixth year of Barcelona’s vegetable garden, which offers patrons the opportunity to select ingredients for preparation by the restaurant’s kitchen staff. “I always like to tell people it’s better than farm-to-table,” continued Atkinson. “It is garden-to-table, and there is no transportation because the farmers aren’t even driving it over.”

CT Guide To Raw Milk: Why Raw and Where To Buy in CT?

Features Ingredients Ingredients Farm to Table CT Farms Local Farm

Luke Shanahan

I submit that raw milk might just be the most real of all foods.

Start with the fact that milk is the only food created specifically to feed something. (Honey doesn’t count, as the pollen honey is made from has its own agenda.) Synonymous with nourishment, raw milk is the first food most human beings—all mammals—ingest. And raw milk, for it to be free of any off flavors and to be safe to drink, requires painstaking care to produce. Every little step in the process matters.

The subtle and intricate flavors in raw milk, the very opposite of the one-note flavor of pasteurized milk or, worse, the waxy cardboard taste vacuum of skim, come from the undenatured biocomplexity in unpasteurized milk. When I read chemists-for-hire claiming, on behalf of big commercial dairy, that there isn't that much nutritional difference between pasteurized and raw, I choose to trust my palate. Well, my palate and the biochemists who say that the difference is real and considerable.

Aussie-Influenced Flinders Lane Opens in Downtown Stamford

If you hear anyone mention Flinders Lane in Stamford, it’s not a street they’re talking about, it’s a restaurant. More specifically, it’s an Australian-influenced restaurant. If you’re as bewildered as I was when I found out this type of cuisine had arrived in Downtown Stamford—and as curious too—keep reading.

I sought out more info. The common-sense thing to-do was to check out Flinders Lanes’ website, where “Modern Australian” is described as “We take inspiration from the cuisines of nearby Southeast Asia and subtle influence from the food of British settlers mixed with that of Greek and Italian immigrants.” I still found myself scratching my head, wondering if this was accurate. I have a few Australian friends so I fact checked with them and both said that this sounded right, and one added, “We don’t have much ‘real’ Aussie food. Meat pies and tomato sauce, maybe.”

CT Bartenders Share their Margarita Recipes for National Margarita Day!

Oh yes it is! My favorite day of the year, National Margarita Day, has arrived. Those who know me, know that when I sidle up to the bar, those working on the other side need not even ask for my order. It's always the same...and it's always a Margarita. Truly, it's the perfect cocktail, and just right for every season. Plus, tequila has been proven to actually have health benefits. Lime, tequila's most trusty companion, is bursting with Vitamin C which we all know helps us recover from illness. Anejo tequila, made from 100% agave, is known to help reduce bacteria and relieve sore throats, and agave helps to fight diabetes. There are so many reasons to embrace and celebrate the Margarita. Do it right with these recipes from local bartenders including: El Segundo, Mézon, Geronimo Restaurant & Tequila Bar, Barcelona, Bartaco, Marcia Selden Catering and Festivities.

Community Table Restaurant & Bar To Re Open Spring 2018

Restaurant Openings Washington Farm to Table

CTbites Team

This just in from Community Table Restaurant & Bar in Washington CT...

Friends,

We are excited to announce that Community Table Restaurant and Bar will be reopening this spring.  We don’t have an exact date yet but, we are hoping to open our doors before Memorial Day and work out any ‘kinks’ before the busy season kicks in.

We have spent the past months contemplating what direction Ct should go in next. We turned to Adam Riess, a Washington native and restaurant consultant, to help us define our goals and offer us options. Though many interesting ideas were discussed, hearing from so many of you who simply wanted Ct to come back the way it was, eventually swayed us to move in that direction.

The Engine Room In Mystic: Food and Atmosphere Worth The Drive

Restaurant Mystic Comfort Food Hot Dogs Lunch Brunch Road Trip American Bar Cocktails Homepage Burgers

CTbites Team

One of my favorite new-ish restaurants to pop up in the culinary hot spot of Mystic, Connecticut is the hip Engine Room. This outstanding restaurant highlights fresh, unique food served in a welcoming, very Instagrammable atmosphere. Let’s talk through their scrumptious menu while settling into their comfortable seats and remarking on their friendly staff.

Whether you think brunch is overrated or not, you should find your way to the Engine Room for a leisurely Sunday brunch with friends. Set inside an open wood and brick interior, with metal chairs and shiny black leather booth seating, you’ll feel comfortable enough to linger over your meal, and unlike many crowded establishments, you won’t feel rushed by the staff.

Back to the menu, which has something for traditional sweet breakfast lovers and those who aren’t really into breakfast foods (oh, the horror!).

Tequila Revolucion Opens in Fairfield

Restaurant Openings Fairfield Mexican Bar Kid Friendly Lunch

Ramin Ganeshram

Located at the former site of Wilson’s Barbecue, the Fairfield favorite of a dozen years, Tequila Revolucion features authentic Mexican/Central American fare in a vibrant atmosphere.

The brainchild of Ryan Gillespie as general manager and Mauricio Guevara, head chef who worked together at New Canaan’s Tequila Mockingbird, Tequila Revolucion is the co-owners’ first independent restaurant venture.

“We collectively have over twenty years experience in the business and Tk years together at Tequila Mockingbird,” says Gillespie. “Each of us had a dream of owning our own place and when this opportunity came up we decided to go for it.”

Gillespie was a manager at the New Canaan eatery and Guevara worked his way up to head chef from a dishwasher.

At the pair’s new venture the focus is on seasonal food and, says Gillespie, they look forward to the growing season when they hope to source as much local food as possible. Since freshness is a hallmark of the Tequila Revolucion approach, very few items on the menu come premade, canned or frozen, down to the handmade tortilla chips, salsas, beans, and sauces.

Harlan Haus Beer Hall Opens in Bridgeport January 10

Five years ago Chef Stephen Lewandowski launched Harlan Social in the heart of the new and emerging South End area in Stamford. Named after his son Harlan, the modern American gastropub quickly rose into a mainstay for locals. Harlan Publick would open next, in the heart of SoNo. The local favorite offers creative comfort food and a wide offering of beverages. On January 10th, Harlan Haus, the German-inspired Bier and Wurst hall, will open to the public, in the historic People’s Bank Building built in 1917.

A century later the well preserved, 7,000-square-foot space perfectly marries the historic Neoclassical elements with today’s modern influences. Most of the building’s architectural details remain well preserved from the elegant light fixtures above, to the curved teller bank wall that separates the bar area from the rest of the restaurant. Harlan Haus is poised for success with its promise to offer superb, innovative, family-friendly fare in a social setting.
