Chef Andrew Mercado's Butternut Squash Dashi Broth Soup Recipe

Recipe Features Recipe Soups

CTbites Team

A few years back, guests were delighted to find themselves dining under the stars in Terrain’s outdoor garden, at a pop-up dinner  hosted by Andrew Mercado of FED Hospitality Group and Chef Jes Bengston. One of the lineup’s starters was this wonderful soup, inspired by campfire cooking and the fall season. The beauty of this soup, is that it is vegan, and built upon a Dashi broth base. In Mercado’s words, it is “vegan, creamy, flavorful, soul-warming, subtly spiced, coconut-infused, simple and perfect for fall weather.” We couldn’t agree more.

Day Tripping: Kingdom of the Hawk—A Fresh Take on the CT Wine Scene

Features Wine Vineyard CT Wine CT Wine Trail Day Trip

Nestled in the forests of Stonington, CT is a new winery aptly named Kingdom of the Hawk. 50 acres of pristine wilderness sits adjacent to a dark gray, contemporary, barn-like structure with fabulous wine, friendly staff, and, of course, hawks in flight.

Conceptualized and designed by Michael and Merrily Connery, this winery epitomizes reimagination and, truth be told, a touch of romance. The Connery’s identified the lot and majestically repurposed the land into a burgeoning vineyard, events venue and social escape.

The wine, such as the Raptor Red and the french-forward 2022 Pinot Noir Rose, is so drinkable that it is easy to see why both local residents are regulars and travelers are taking time to visit. Add the ambiance, which often includes live music and inviting fireplaces - both indoor and outdoor - and the Connery’s have essentially designed a life they love: spirited music and must-have spirits.

Rose All Day. Wine o’clock. Wine not? And remember, Sip Happens! Ah, the battlecries of the summer season! From day trips to special gatherings (any bridesmaids out there?), a bucolic, rambling vineyard is the perfect place to while away sun-drenched hours, maybe learn a little something, nibble a little something (wine and charcuterie go hand-in-hand, after all), and sip a whole lot of somethings. Those somethings are local, delightful and flavorful, handcrafted with skill and dedication, and finished off with a wine barrel full of love. A little note for your summer ramblings and sipping: Entries with asterisks (*) are participating wineries/vineyards on the CT Wine Trail. Pet-friendliness is also noted.

House Of Pho in Stratford Serves Up Much More Than Delicious Pho

Restaurant Asian Vietnamese Pho Soups Noodles Noodle Soup Stratford Openings Lunch Comfort Food

James Gribbon

At a hillside shopping center overlooking nothing more fashionable than the far ridge line of the Housatonic River and Sikorsky’s helicopter factory steams a great bowl of pho. It’s a standard bo vien with beef meatballs, ordered lightly rich with small convex globules of transparent oil magnifying both light and flavor in the broth. I’ve recently dosed a bite with a slice of positively infernal green pepper. A less varied quarantine diet has apparently softened my usually spice-calloused tongue. My eyes are watering, and my nose is running. I’m in heaven.

We continue our merry Thanksgiving romp with a recipe from Marcia Selden Catering. The Seldens have cooked for, quite literally, thousands of hungry guests, and this is their go-to recipe for Butternut Squash & Apple Soup. It is incredibly simple to make and always a crowd pleaser. Make sure you garnish with the Pepitas. They add some nice texture to the creamy (dairy-free) soup.

Southern Connecticut Wine Company Invites You To Make Your Own Wine

In 2016, Forbes Magazine claimed to have discovered the “secret to happiness.”  “Spend money on experiences, not things,” they told their readers.  CNN took it one step further.  “That's in part because the initial joy of acquiring a new object, such as a new car, fades over time as people become accustomed to seeing it every day…,” they reported.  “Experiences, on the other hand, continue to provide happiness through memories long after the event occurred.”

Those looking to invest in a meaningful experience can find a solution tucked away in Wallingford, just off the highway, but hidden from view.  Southern Connecticut Wine Company, located in an unassuming garage-like building behind the railroad tracks, affords people the unique opportunity to create their own wine over the course of a season.  I had the chance to be an honorary co-op member for the day and witness a little bit of what they have to offer.

Nit Noi Provisions: Sustainable Thai Style Soups & Provisions

Restaurant Asian Thai Noodles Soups

Jessica Ryan

It’s all about the broth, North Shutsharawan told me when I met him at Nit Noi Provision’s pop-up location at Bar Bucha in Westport last week. Inspired by the Thai street food scene and the healthy foods available for lunch, North had the idea to replicate his grandmother’s recipe with the hopes of selling it both in Connecticut and in Colorado. Nit Noi which literally means “a little bit” is based on a simple soup he ate as a child purchased from vendors at the market called Guay Tiew Kwa Gay. At the market each vendor had his own specialty dish, just one, North explained to me.

Road Trip: Chamard Vineyards Farm, Winery, & Bistro in Clinton

Ingredients Restaurant Clinton Road Trip Vineyard WIne Lunch

How often does one get to visit a vineyard that’s blanketed by crisp white snow, or highlighted by a fiery autumnal backdrop, making it even more magical than it already is? Nestled in the shoreline town of Clinton, about a mile beyond the hustle and bustle of the outlet shops is a charming vineyard that boasts over 20 acres of grapes as well as their bountiful fruit, vegetable and herb gardens. One might not consider Connecticut to be wine country, but Chamard Vineyards Farm, Winery, & Bistro is worth noting. Established in 1983, Chamard’s winning Estate Reserve wines are exclusively made in their winery, and can be enjoyed in their Tasting Room or in their dining room. The bistro offers a creative farm-to-table menu featuring a French inspired American menu.  Their Chardonnay and Merlot are very good.

Lunch Break: Soups & Sandwiches at Wah Lah in Bethel CT

Restaurant Soups Bethel Comfort Food Lunch

Amy Kundrat

Wah Lah is the ideal lunch location for a cozy cup of soup or a delicious pressed sandwich, with a side of small town charm. A fast-casual restaurant that focuses on the holy lunch trinity of soups, sandwiches, and salads, Wah Lah sets itself apart thanks to its amiable and talented owner-chef Keith Burke, and a well-executed and consistent menu that honors classic and wholesome recipes.

Keith opened Wah Lah in 2010. A graduate of the Culinary Institute of America in Hyde Park, he worked in the foodservice industry for 14 years, traveling across the country before deciding to change his pace and put down roots in the small Connecticut town of Bethel. The fast casual dining concept appealed to him, and he decided to marry that approach to the lunch-friendly category of soups with salads and sandwiches soon following.

Wah Lah’s menu is a list of eight to twelve soups made fresh daily

What's PHO lunch today? As autumn quietly slinks in, there's nothing like a truly authentic PHO to ease us into the chill that awaits. Head on over to Q's Restaurant at 172 Main Street in Norwalk (the old Valencia Luncheria spot) for the real McCoy. Recently opened (about 3 months and counting) and charmingly tiny, Q's is the love child of husband and wife duo Charles Eaton and XiaoNing Liu. Together, they have brought a small menu featuring Pho as well as other Vietnamese and Chinese cuisine to their wee, little kitchen.

I had the AC on just last week and now it's time for the heat.  It's also time for blankets, fires and soups!  A friend brought back some bacon fresh from a smoke house up in Vermont.  I wanted to make something that would complement the flavor so I came up with a Smokey Potato Leek Soup and it was fantastic.  I ended up eating it for breakfast, lunch and dinner since it was sooo good & simple to make!

Jeanette Chen is a resident of New Canaan. Her Healthy Living Blog is dedicated to promoting a healthy lifestyle through good nutrition.

Lately, I've been craving both Thai coconut curry soup and lentil soup. Perhaps, it's because I wanted to relive the heady bowl of Thai Coconut Curry Noodle Soup I had for lunch last week when it was wet and dank outside. There is something warming and completely comforting about spicy Asian noodle soups. Thick lentil soups have also been on my mind, as it's getting cooler out, calling for heartier fare. These two comfort foods inspired me to come up with a recipe for Thai Coconut Curry Lentil soup.
