A few years back, guests were delighted to find themselves dining under the stars in Terrain’s outdoor garden, at a pop-up dinner  hosted by Andrew Mercado of FED Hospitality Group and Chef Jes Bengston. One of the lineup’s starters was this wonderful soup, inspired by campfire cooking and the fall season. The beauty of this soup, is that it is vegan, and built upon a Dashi broth base. In Mercado’s words, it is “vegan, creamy, flavorful, soul-warming, subtly spiced, coconut-infused, simple and perfect for fall weather.” We couldn’t agree more.

Rowayton’s Arden’s is continuing their “After Hours” dinner series for the third summer in a row, and we were lucky enough to sit down with owner Jill Lukeman to get a first look at what’s to come. 

For those who aren’t familiar, Arden’s is a neighborhood cafe located in the heart of Rowayton. Its coastal decor and delicious fare makes it the perfect spot to enjoy a delicious breakfast, lunch, or cup of joe. Since opening in 2022, the team has hosted monthly dinners to expand beyond their daytime offerings. 

“We have always been passionate about entertaining our friends and hosting dinner parties at home. When we opened Arden's, we thought why not bring this same spirit to our cafe and offer something that feels like dinner at a friend's house (without the headache of planning and the clean-up!). We are also passionate about music so we incorporated a music element to make the evenings even more unique and intimate,” Lukeman shared with us.

It’s Nantucket meets the Mediterranean. Arden’s, Rowayton’s newest eatery, is a community cafe offering up simple seasonal fare that’s as beautiful as it is delicious.

Inside the beachy décor is minimalist with hints of flea-market vintage finds. You’ll find antiquated oyster tins, vases filled with vibrant fresh flowers, beechwood furniture, a curated marketplace with specialty gourmet food items, locally fabricated linens alongside local honey, assorted spices, hot chili oil in beautiful glass jars, ceramics and other wonderful finds. Wonderful, whimsical floppy rattan shades resembling oversized straw hats hang from light fixtures overhead. Arden’s welcomes you in immediately with a warm embrace that doesn’t want to let you go.

Stay a while and linger over a simple menu of salads, sandwiches and toasts. While the concept is simple the recipes are elevated using ingredients from several local purveyors including Wilton’s Millstone Farm and Darien-based Flour Water Salt Bread, Nit Noi Provisions and Ilse coffee. Ingredients matter at this health-forward café. At the helm of the kitchen is Moises Aguilar formerly with Southend Backend. Here he is tasked with delivering the ultimate flavor profile from the simplest of ingredients which he has clearly mastered.

At a hillside shopping center overlooking nothing more fashionable than the far ridge line of the Housatonic River and Sikorsky’s helicopter factory steams a great bowl of pho. It’s a standard bo vien with beef meatballs, ordered lightly rich with small convex globules of transparent oil magnifying both light and flavor in the broth. I’ve recently dosed a bite with a slice of positively infernal green pepper. A less varied quarantine diet has apparently softened my usually spice-calloused tongue. My eyes are watering, and my nose is running. I’m in heaven.

We continue our merry Thanksgiving romp with a recipe from Marcia Selden Catering. The Seldens have cooked for, quite literally, thousands of hungry guests, and this is their go-to recipe for Butternut Squash & Apple Soup. It is incredibly simple to make and always a crowd pleaser. Make sure you garnish with the Pepitas. They add some nice texture to the creamy (dairy-free) soup.

Last week I had the privilege of attending a truly wonderful and informative dinner at Wakeman Town Farm on the importance of sustainable seafood. We first heard from Norm Bloom of Copp’s Island Oysters, followed by Kevin Conroy, owner of The Restaurant at Rowayton Seafood and the Rowayton Seafood Fish Market. He was joined by Chef Charles Hoffman the restaurant’s executive chef who prepared a most memorable meal. 

The Blooms have been in the oyster business since the 1940s and currently operate one of the last standing traditional oyster farms in the United States. Norm Bloom and Son is a fourth generation family-owned farm that prides itself on high quality, consistent and sustainable products. They have a fleet of 15 boats and their dedicated crew harvests oysters and clams year round from the deep, cold, and nutrient-rich waters along the coast of Connecticut.

It’s all about the broth, North Shutsharawan told me when I met him at Nit Noi Provision’s pop-up location at Bar Bucha in Westport last week. Inspired by the Thai street food scene and the healthy foods available for lunch, North had the idea to replicate his grandmother’s recipe with the hopes of selling it both in Connecticut and in Colorado. Nit Noi which literally means “a little bit” is based on a simple soup he ate as a child purchased from vendors at the market called Guay Tiew Kwa Gay. At the market each vendor had his own specialty dish, just one, North explained to me.

A fast-casual restaurant that focuses on the holy lunch trinity of soups, sandwiches, and salads, Wah Lah sets itself apart thanks to its amiable and talented owner-chef Keith Burke, and a well-executed and consistent menu that honors classic and wholesome recipes.

Keith opened Wah Lah in 2010. A graduate of the Culinary Institute of America in Hyde Park, he worked in the foodservice industry for 14 years, traveling across the country before deciding to change his pace and put down roots in the small Connecticut town of Bethel. The fast casual dining concept appealed to him, and he decided to marry that approach to the lunch-friendly category of soups with salads and sandwiches soon following.

What's PHO lunch today? As autumn quietly slinks in, there's nothing like a truly authentic PHO to ease us into the chill that awaits. Head on over to Q's Restaurant at 172 Main Street in Norwalk (the old Valencia Luncheria spot) for the real McCoy. Recently opened (about 3 months and counting) and charmingly tiny, Q's is the love child of husband and wife duo Charles Eaton and XiaoNing Liu. Eaton, a Vietnam Vet, met Liu (a native of Old Nanking Province in China) while he was serving a tour of duty in Asia. Together, they have brought a small menu featuring Pho as well as other Vietnamese and Chinese cuisine to their wee, little kitchen.

When the River Cat shuttered its doors in March, after 12 years on Rowayton’s main drag, the closure of the beloved neighborhood restaurant and bar left a gaping hole in Rowayton’s dining and social scene. 

So when I returned to check out the recently launched SAILS, a new American bistro with a spiffed up nautical vibe, I wasn’t surprised that the highly polished teak bar was three-deep with old-timers and new fans, making themselves right at home in a familiar, yet completely transformed haunt.

I had the AC on just last week and now it's time for the heat.  It's also time for blankets, fires and soups!  A friend brought back some bacon fresh from a smoke house up in Vermont.  I wanted to make something that would complement the flavor so I came up with a Smokey Potato Leek Soup and it was fantastic.  I ended up eating it for breakfast, lunch and dinner since it was sooo good & simple to make!

Lately, I've been craving both Thai coconut curry soup and lentil soup. Perhaps, it's because I wanted to relive the heady bowl of Thai Coconut Curry Noodle Soup I had for lunch last week when it was wet and dank outside. There is something warming and completely comforting about spicy Asian noodle soups. Thick lentil soups have also been on my mind, as it's getting cooler out, calling for heartier fare. These two comfort foods inspired me to come up with a recipe for Thai Coconut Curry Lentil soup.

Roasted Cauliflower Soup with White Truffle Oil

½ onion finely chopped

2 Tbs. olive oil

1½ C. cauliflower florets

5 C. (40 oz.) chicken stock

1 Tbs. smoked salt (Penzey’s in Norwalk sells one and Whole Foods sells a delicious Chardonnay smoked fleur de sel)

cracked black pepper

Soup season is upon us bringing to the table a plethora of wonderful Fall dinner options. I am always on the hunt for interesting new contenders for my weekly line-up, so I jumped on a tip from a friend who recommended that I check out the 17 Bean & Barley Mix from Trader Joe’s.

The bag's ingredient list has an interesting assortment of, you guessed it, 17 types of barley and dried beans, including black eyed peas, pinto, lentils and navy. You would certainly enjoy this bean mix up straight, but I decided to throw in some added protein and a little varied flavor with the help of some smoked turkey wings, (although you could use a ham hock or bacon as well).

Here’s my recipe for Hearty Bean & Smoked Turkey Soup.  This soup can also be made vegetarian by omitting the turkey and using vegetable stock. It is a simple weeknight entree everyone will enjoy.
