Silvermine Coffee Roasters Opens in Norwalk with Unique Beans From Across the Globe

The smell of freshly roasted coffee greets customers as they step into Silvermine Coffee Roasters in Norwalk. Behind each cup is more than carefully sourced beans- it’s years of experimentation, craftsmanship, and a desire to showcase the unique story each coffee bean has to tell. What began as frustration with bad coffee has evolved into one of Fairfield County's most distinctive specialty coffee roasters, offering nearly 30 carefully crafted blends from around the world.

For owner Thomas Morsanutto, coffee roasting was never part of the original plan. While working at a financial technology company in Wilton, he grew frustrated with the quality of coffee available in the office and began coffee roasting himself.

“I spent hours roasting coffee for friends and family, but eventually it just wasn't sustainable. I decided to take a chance and build a real business that focused on takeout coffee, coffee beans, and online sales. We wanted a concept that could succeed even if people weren't gathering into a cafe,” Morsanutto said.

The strip mall right on the Norwalk – Wilton line, has a new tenant who’s come from Canada to do his thing. Taking over the space (and some of the spirit) occupied for the past nine years by The Dilly Duck Shop is Chez Jack, where they’re doing breakfast, coffee, artisan sandwiches, and an authentic poutine, because there is a Quebecoise vibe scattered about the menu. The “Jack” in Chez Jack is Jacques Talbot, a successful veteran chef and restaurateur behind the Cosmos restaurants (or resto-lounges) in Quebec City.

Thirty years ago, in the mid-90s, 1996, to be precise, South Norwalk’s restaurant scene started to see some buzz. Many would argue that the spot that sparked it all was Barcelona Wine Bar and all it brought with it. The tapas, the vino, and certainly when people danced on the bar top. In the present, Barcelona has grown significantly, so much so that they’ve ALMOST got one location for every year they’ve been a restaurant and a company. To date, there are 24 of ‘em across 12 different states, including four in Connecticut, where their growth first began.

In February, we brought you a piece highlighting The Haven and all its different components; the event space, the speakeasy, and two others that were on the way in a wellness forward cafe and the rooftop. Well, folks, the latter is here, and if you missed the rooftop that was formerly part of Evarito’s, it’s back, and it’s totally reimagined. South Norwalk just got a serious bagel upgrade. Husband-and-wife culinary team Chef Gary King and Pastry Chef Emily King are officially opening Norwalk Bagel Co. on Wednesday, May 13, bringing handcrafted sourdough bagels, elevated deli classics, house-made baked goods, and chef-driven breakfast and lunch offerings to the neighborhood. The duo, who launched the popular Ridgefield Bagels & Bakes in November 2023, are now expanding their scratch-made, naturally leavened bagel concept to South Norwalk.

If you’ve been to Calf Pasture Beach anytime since the end of May, the bright colored, beachy food trailers near the concession pavilion very likely caught your eye and captured your attention. Aiming to make some changes to Norwalk’s beach with Luca’s Beach Kitchen is Anthony Luciani, his wife, Rosa, and their partner, Cory Burns. Luciani, as locals know, is a Norwalk native who owns the popular Mr. Frosty’s Ice Cream Shop nearby and a food truck, Seaside Sliders. As for Burns, he used to work for Luciani as Mr. Frosty’s first ever ice cream truck driver. Long story short, they stayed friends for over 20 years, Burns wanted to leave his career in finance behind and team up with his buddy on a cool concept.

Third times a charm, right? That’s what the ownership quartet of Maxim Schiavone, Joseph Magrath, John McGraw, and Jonathan Ackerman is hoping for with Brass & Bone on Norwalk’s Washington Street. Replacing two short lived music venue, restaurant and bar concepts before it in Music & Industry and Washington Social, Brass & Bone’s foursome of friends believe they have the recipe to make it work, especially with their respective backgrounds. Schiavone is an entertainment guy, McGraw has a tech and marketing background, Ackerman is a veteran bartender, and Magrath is a chef.

When John Nealon opened Crust Issues, three years ago, he wondered if he’d be able to pay the electric bill each month. He knew going in that giving it another go as an owner after Fortina and after Taco Daddy, The Lila Rose, and Cugine’s Italian, that the restaurant game is a gamble. And he was already up against it by taking a lease across the street from Bob’s Discount Furniture, next to a car wash, and in a spot in a strip mall next to a hair salon, a tattoo parlor, and an adult novelty store. Oh, and the parking there, it sucks. But Nealon’s early mornings slaving over his dough recipe wouldn’t be for nothing. He kept at it and kept pushing, daring to create pizza, pasta, and sandwich combinations that not many others would attempt.

In 2015, three longtime friends and lifers in the hospitality industry decided to open a sports bar in South Norwalk. Over 10 years later, The Blind Rhino, and co-owners Casey Dohme, Matt Bacco, and Jamie Pantanella have seen one location in SoNo grow into another in Black Rock, another in Milford, and two food trucks. And that’s not all. They’re present at events all over Connecticut and beyond and they do a lot for charity—including hosting their own golf tournaments to raise funds for local organizations. Still…not done.

The restaurant space on the corner of Washington and N Main has seen its share of flips. Evarito’s had an over five-year run, then it was The Pompano for a blink. Drive or walk by it now and you’ll notice the dining room is empty-ish, but more like a clearing, and that the lights are on. And the lettering on the glass door reads, “The Haven.” Behind all of those previous concepts, and behind The Haven, is Christian Burns, who you’re familiar with as the brains behind The Ginger Man and The Cask Republic locations. With The Haven, Burns and his landlords, Joe and Aldo Criscuolo, are teaming up on all four aspects of what this is and what it’s going to be when it’s whole.

One of South Norwalk’s anchor restaurants, Washington Prime, made waves on social media amongst its fans for announcing a ghost kitchen delivery concept, El Jefe’s Mexican. Let’s not freak out here, people. Washington Prime is not in trouble. And they are still a steakhouse. If you’re a bit puzzled as to what a ghost kitchen is, it’s pretty simple. It’s not a physical location where you can go, get service, place an order, and dine-in. Most are delivery and pickup or delivery only via a third-party delivery app or service.

Norwalk’s growing coffee shop scene just got one new addition. Carpe Diem Cafe’s goal? Specialty, higher end, baked goods made in-house, coffee shop parties, adult beverages, and a few Dominican dishes amongst the pastry and breakfasty offerings. Walk through the doors of Jeff Taibe’s izakaya, Bar Bushido, and chances are, you’ll be greeted by Kylie Keeley, especially if you’re sitting down at her bar.

Correction. One of her bars.

The pub part of Bar Bushido—where you’ll find yakitori, ramen, karaage chicken, DIY hand rolls, and other Japanese bar bites—is where Keeley says the “drinks match the energy.” The izakaya is a vibe; it’s loud (but with good energy), casual, and a great hangout for any occasion, and it’s where she’s rocking out a drink list of highballs, creative sake bombs, and cocktails ingredients (especially Japanese ingredients) that should spark your curiosity and tickle your tastebuds.

At the very back of the space is Bar Bushido’s alter ego, a quieter, more intimate hand roll bar, where Keeley’s cocktails are more focused on highlighting a certain flavor profile.

I can’t put my finger on exactly when it was or where I first saw it, but early in 2025, I spotted a pizza at Magic 5 Pie Co. that left me both curious and confused. Known for their charred, crispy/chewy, light artisan pizza, I noticed a different shape. This one wasn’t round like their everyday pies. It was square. Later in the year while chatting with one of Magic 5’s owners, Shawn Longyear, who co-owns the pizzeria, along with The Spread, and El Segundo with Christopher Rasile, Andrey Cortes, and Chris Hickey, I couldn’t help but ask about it.

As summer dwindles down in Connecticut, lobster rolls are out, tacos are in. At least that’s the case at the South Norwalk’s Metro-North station’s eastbound side. When the vacant space where LobsterCraft once slung rolls, lobster mac, and bisque, is now home to Tacos 203, a spinoff of Taco Guy. Owner Adrian Hurtado, who started his Taco Guy brand, first as a successful food truck, then a brick-and-mortar in Norwalk’s Wall Street area in 2023, snagged the train station spot by putting in an application bid for it with the Norwalk Parking Authority, not knowing whether he’d get it or not.

A mere forty days ago, Harrison Knowles decided to quit his corporate job and start his mobile coffee business– MANIFEST Coffee + Community. Based in Knowles’ own neighborhood of East Norwalk,  MANIFEST focuses on developing relationships with customers and creating a welcoming environment where everyone can express themselves freely over the highest quality of beverages.

In addition to the focus on community, Knowles ensures his customers get the highest possible quality beverages, as he personally sourced his vendors from the New York Coffee Fest. MANIFEST uses Ilse coffee which is based in North Canaan Connecticut, as well as Ghost Town Oats oat milk, and Transcendence coffee syrups which are formulated with only three ingredients and all natural flavors.
