As someone who has experienced the chaotic magic of a New Orleans Mardi Gras several times, I can tell you that the key to any good Mardi Gras celebration is three fold: great traditional Southern food, jazz or other brassy music accompanied by a lot of dancing, and wacky & wild costumes.
