I finally made it to Christos Restaurant & Bar in Wallingford, the third pizzeria of Connecticut’s self-proclaimed Three Kings of Pizza. While the three brother-owners may share common DNA, the pizzas at each show a very different view of what pizza should entail.
When the pizza arrived, the first thing I noticed was the high level of char. Not only was the crust overly charred in places, but more than half of the cupped pepperoni circles were significantly darkened by the hot, wood-fired oven. The other item I noticed was the abundance of toppings, a lot of sauce and cheese, plus decent portions of pepperoni and sausage.
Mama’s Boy. Peaches. Gates. Probably a few others I’ve omitted. And currently, Tequila Mockingbird in New Canaan. Yeah. There’s a chance you’ve sat at one of Justine Bassani’s bars somewhere in Fairfield County. An acclaimed bartender that’s won competitions and has had her fair share of limelight in magazine articles, Justine is pretty open about her own struggles with alcohol—she’s been sober for a while now—and although she’s still in the bartending game, she’s been pretty busy outside of the industry.
Driving along Center Street in Wallingford, you can find the Bees Knees Bistro across the street from the post office between North Main Street and Wallace Avenue. With a classic red brick exterior, glowy lanterns, and a string of bistro lights, the Bees Knees Bistro charms you before you even set foot inside. Run by Wallingford-nativeJena Schlosser and her two aunts, Patti Schlosser and Catherine (Cathie) Muzio, the neighborhood bistro opened in December of last year. The trio is there every day of the week, working hard and wearing many hats. The 45-seat family-run bistro serves breakfast and lunch, with a comprehensive coffee and beverage list. With such a large variety of offerings, the bistro is family-friendly (there’s a ‘Honey Bees Menu’ for kiddos under 12 years of age), but also great for casual dining for couples and get-togethers among friends. The Bees Knees team also crafted the menu with dietary restrictions in mind with ample offerings for those following a gluten-free or vegan diet.
Prominent CT bartenders shared with me what they love to make and do to celebrate St Patrick’s Day. The most common answer to what they enjoy making is “plans to get my shift covered”, because we tend to hide on these holidays unless we are working. In a small shopping center off a main thoroughfare in Wallingford, CT, across from a McDonald’s and a Rite Aid, a unique bakery is challenging the status quo of baked goods in central Connecticut. At Kouign, Chef Chelsea Tripp is giving classical Patisserie a facelift, creating innovative pastry concepts like cranberry brie danishes and blueberry cardamom scones in an area that has historically lacked culinary distinction.
“It was a lot of chocolate on chocolate when we opened here in 2021” Tripp says with a wry smile. As someone who’d “rather eat a cheeseburger than a slice of cake,” Tripp creates pastries that meld sweet and savory in unexpected ways, with a menu that changes each week. “People find it weird at first, but then they try it and enjoy it,” she says, describing how she incorporates ingredients such as miso and turmeric into her sweets. “It just works – I promise I won’t steer you wrong,” she declares.
As a judge for each of the first two years of SoNo1420’s Blaze Whiskey Competition—that’s four rounds total, by the way—one of the best drinks I tasted came from a bartender I hadn’t heard of before, but from a place I’ve not only been to, but wrote about in the past.

Mercato Italian Kitchen is a new favorite spot for inspired beverages, and they are newly open in the Farmington Valley serving drinks that are more fire than their pizza ovens (which both have names. I never knew pizza ovens had names.)
After doing a live creative session on Instagram with Bianca Giuliano, their bar manager and beverage curator, I was instantly intrigued by her ingredients and drinks that were based on classic cocktails, but with crowd pleasing twists and riffs.

The Canton Location just opened its doors for dinner this week, and is a “must try” for anyone in the valley that loves amazing drinks (her 0%ABV menu ROCKS, by the way!) perfectly rustic wood fired pies, and great ambience. (SIDE NOTE: I had a great burger with burrata)
Would you rather have an adult beverage, or something alcohol free?
The answer is yes.
There’s a beautiful conundrum to ponder. Drinks without alcohol are being conceived, prepared and executed with the same level of care and thought as their boozy siblings, and sometimes more.
Ten years ago the cocktail's second golden age was in full swing, yet you still would have been hard pressed to find menus at upmarket bars focused on making cocktails without alcohol. The bartender could make you something sans booze, and it would be excellent. It wouldn't however have commanded the same research, preparation and attention as the items taking up real estate on the menu.
No-booze drinks were at best a kind afterthought, a little bit of bartender charity for those not able to imbibe. At worst, and far too often, they were the subject of downright shade and ridicule-when an order for a "fruity virgin drink " came in, you could hear the pretentious eye roll. There was mocking going on, but it had nothing to do with a drink. Mocktails were considered either a momentary novelty or a straight up waste of time.
Award-winning and beloved Connecticut brand Caseus today announced the opening of its newest venture: Caseus Provisions, a brick-and-mortar specialty shop and grilled cheese to go counter at 619 Center Street in Wallingford, Connecticut. Known for its famous tomato soup, mouth-watering grilled cheese sandwiches and delicious treats from the Crispy Melty food truck (formerly The Caseus Cheese Truck), the new shop will offer its famous grilled cheeses made fresh to-go, cheese and charcuterie specialty platters and a highly curated shop of provisions including chocolates, pickles, vinegars, pastas and more. The specialty cheese shop and grilled cheese quick service restaurant will open on Saturday, April 1, 2023.
