Case in point, Flour Water Salt Bread’s Thursday pizza night, a mere two miles or so from my apartment. Now, I’m no stranger to their sourdough pizza, as I’ve had it years ago, and on select days, it’s available as a take-and-bake to-go option if you happen to be in one of their locations grabbing bread or a pastry. But, FYI: hot, fresh pizza is, at least for now, only going down in Darien every Thursday (weather permitting) from 4:30 – 7 p.m. in the courtyard outside of Flour Water Salt Bread. Oh, it’s a scene! If you go, expect the classics—NY style cheese, pepperoni (using that good Ezzo for that cupping effect), a margherita, a cheese-less red sauce pie (with fresh basil and ultra-thin slivers of garlic, a la, Goodfellas), and some type of white pizza, that, on the night I went was rosemary, salt, shallots, fresh mozzarella, crushed pistachios, and 24-month aged parmesan. Ingredients that go on the crispy, light, super digestible pizzas, as you should expect from Flour Water Salt Bread, are the already mentioned Ezzo, Bianco Di Napoli tomatoes for sauce, Grande Mozzarella, and seasonal fare when it applies or if there’s a special. For after pizza, or before, depending how you get down, are cups of Momu Ice Cream from Westport, who set up a pop-up station outside of the bakery in the courtyard. Their creamy, small batch artisanal ice cream flavors on pizza nights are typically chocolate, vanilla, and a few collaborations with FWS that have featured the bakery’s lemon curd, cookies, coffee cake, and banana bread, plus, toppings like homemade rainbow sprinkles and torched-to-order marshmallow fluff. The extra incentive, not that you needed one for pizza and ice cream, is it’s an affordable night out, especially since it’s BYOB, so feel free to bring beer, a bottle of wine, or batch up some cocktails. And if you forget, The Town Cellar is just a few minutes away on foot. Always say “yes” to Momu’s ice cream. This one featured Flour Water Salt Bread’s lemon curd mixed with Momu’s vanilla bean ice cream. To order, it’s pretty straightforward. The bakery will announce on Wednesday or Thursday on social media if pizza is a full go, and instead of walking in, it’s probably best to pre order pizzas on their ordering platform where you’ll see the words “Hot – (type of pizza) Thursday night pickup.” It’s as easy as adding a pie or more to your cart, putting a pickup time in the comments, and when you show up, check in, and they’ll start working on your order.
