I’m not sure when I first heard about Sea Salt Baking Company, but as Connecticut’s cottage baking industry has been exploding recently and my interest in fresh, local, treats has shown no signs of waning, I was eager to learn more. Plus, If the word on the street matched the actual product from this baker (with cookie baking in her DNA), I knew I’d be in for a treat.

Sea Salt Baking Company is the “baby” of Jaeca Sweeney, a Fairfield mom of two who found herself with a little extra time on her hands during the pandemic and knew cookies were calling.

“The pandemic hit and my sister and I were experimenting in the kitchen with Grandma’s handwritten recipes. I would drop fresh-baked cookies off at friends’ doorsteps and I realized I could give friends a moment of bliss during this crazy time. I just loved making people happy.  One weekend, I started baking out of my house and I immediately sold out. I realized that I needed to get a cottage baking license that allows me to bake in my home,” Jaeca shared.

Grandma was not your ordinary baker.  Jaeca grew up in a family of bakers and food entrepreneurs. Her grandmother started Goldilocks Bakery in the Philippines on a roadside stall and turned it into an international brand with over 500 locations in the Philippines and beyond.  So to say Jaeca felt a little pressure was an understatement!  But once I tasted my first (of many) boxes of Jaeca’s cookies, I was blown away.

Sea Salt Baking Company’s cookies are not your huge Levain Bakery type cookies. These are every day, minimal guilt, melt-in-your-mouth deliciousness.  Her current flavors are Chocolate Chip, Toffee Chip, Halfies (Half Double Chocolate/Half Chocolate Chip), Double Chocolate Chip, White Chocolate Churro and Oatmeal Raisin. Though the Halfie is the most popular, when I tell you that they are all equally insane, I am not lying! The variety box is a slam dunk, though, if you would like to sample them all.  And of course, there is a touch of sea salt atop every cookie because the salt just makes everything taste a little sweeter, and you get that great salty/sweet experience.

Sea Salt Baking Company is based in Fairfield. Jaeca procured her Cottage License and she is cranking in the kitchen every day just trying to keep up with her growing business. In addition to cookies, Jaeca makes cookie cakes, “because who doesn’t want a giant cookie for their birthday!”
