Tomato Montadito w/ Goat Cheese Recipe via Barcelona Wine Bar

Tomato season is in fill swing in CT and Barcelona Wine Bar is featuring this gorgeous local bounty. There is nothing simpler than this recipe for Tomato Montadito w/ Goat Cheese, but some things are better left simple.

1 loaf of crusty bread

½ cup of Olive Oil

1 log soft goat cheese   

2 Large heirloom tomatoes

4 Basil leaves

Salt and pepper

Step 1:
Dice the tomatoes and place in a small bowl. Finely chop the basil and add to the bowl with the tomatoes. Drizzle w/ 2 tablespoons of olive oil, and sprinkle with salt and pepper. Stir together.

Step 2:
Slice the cheese.

Step 3:
Slice bread into 1-inch pieces. Brush each side with olive oil. Spread out on a baking sheet in a single layer.

Step 4:
Turn the oven on top low broil. Place the bread in the oven on an upper rack. Let the bread brown on each side.

Step 5: Pile the bread with the goat cheese, tomato, basil, and olive oil topping. Serve immediately.
