The kids are going back to school, and so should you! Lead by example and take one of Saugatuck Craft Butchery's fall/winter classes. They are offering their usual Butchery 101 classes, as well as a special Holiday Edition. All registration is now done online, so visit the Craft Butchery website to reserve your spot. See below for details on all available classes. 

They are also conducting pig butchering demonstrations- unlike the classes this is not hands-on, but it is still a great way to watch and learn as our butchers walk through the basic anatomy of a pig, artfully carving it into primals, then individual cuts. 

Butchery 101 Classes

Classes are offered on pork, beef, lamb and chicken. Each 101 class is two hours and covers one of these animals. Students will have the opportunity for hands-on participation in the nose-to-tail butchering of the animal. Topics covered in the two hour session will include:

  • Knife skills & safety techniques
  • Basic anatomy
  • Cooking demos & taste tests
  • Discussions on sourcing, sustainability and labeling
  • Hands-on butchering of a whole animal- breaking down into
    primals and then to individual cuts
  • How to tie a roast and other retail cut techniques
  • Lessons on how to cook different cuts of meat and best resources for cooking
    information
  • Tasting of samples
  • Take home freshly butchered cuts of meat

Westport Farmers’ Market, Pig Butchering Demonstration: Oct. 4, 2012: Come watch and learn as the Saugatcuk Craft butchers walk through the basic anatomy of a pig, artfully carving it into primals, then individual cuts.

The Westport Farmers’ Market is at the Imperial Avenue Commuter Lot. This event is free!

Oct. 6th: Greenwich FOOD+WINE FestivalJoin Craft Butchery for their second appearance at the Greenwich 2012 FOOD+WINE FESTIVAL. Fairfield and Westchester Counties' Culinary Best come together for this 6.3 Acre Gourmet Festival! On Saturday, October 6 the Culinary Village will offer grand, savory tastings and intriguing demonstrations from more than 90 exclusive food, wine and spirit vendors. Guests will also enjoy Celebrity Chef and Featured Chef cooking demonstrations, an Amateur Cook-Off, wine sommelier presentations, a Beer Garden, celebrity book signings, and more. Come watch and learn as our butchers walk through the basic anatomy of a pig, artfully carving it into primals, then individual cuts. Our demo is in the BBQ area from 3-3:30, but this is a great event, so come enjoy it for the day!
