We love it when two of our favorite food brands team up for a pop-up that involves delicious carb-loaded brunch fare.  You may have heard me sing some praise for Adam Goldberg and his ridiculously tasty Pop-Up Bagels. Well, he has found a new regular Stamford pop-up location and dedicated cooking team with Marcia Selden Catering. Last weekend, CTbites got the chance to tag along for some bagel making fun. And, don’t worry…if you missed this past week’s pop-up event, mark your calendars for March 6th, and follow @popupbagels for notifications because these bagels sell out QUICKLY!

So, here’s how this bagel making and baking went down.

Saturday morning, the alarm went off at 5:30 AM for me, but bagel master, Adam Goldberg, and Robin Selden, of Marcia Selden Catering were out of bed even earlier to get the dough proofed and ovens heating. A small but dedicated team of six of us rolled, formed, boiled, and “seasoned” (this was my role as “spice girl”) some 50 dozen bagels.

Guests had gone online a week prior to order their dozen Everything, Sesame, Poppy, Maldon Salt & Plain, and it’s worth noting that in addition to the aforementioned warm out of the oven rings of doughy greatness, this week was extra tasty as Marcia Selden created a “Brunch Box” add-on to to be enjoyed with your bagels. The Brunch Box schmears included: Caramelized Shallot Truffle Butter, Everything Scallion Cream Cheese, Chunky Deviled Egg Salad, White Fish Salad with Capers & Dill. These shmears will be updated with fresh ideas for each and every pop-up. We can’t wait to see what Selden has in store for March.

While Adam’s bagels are always top notch in my book, especially when eaten hot out of the bag while driving home for pickup, I will say Selden’s shmears really upped the breakfast ante in terms of creating a well rounded eating experience. One guest actually reached out to tell me just to applaud the Everything Cream Cheese which she called an “umami bomb.” Wise woman.

Bagel packages are sold at varying levels starting with 1st level which includes 1 dozen bagels, the butter and cream cheese for $30.00 and going up to the full package of all four shmears + a dozen bagels for $69.00

You can track Adam Goldberg’s Bagel Pop-Ups via instagram and sign up to receive notifications for future events.

Adam will be back at Marcia Selden’s on March 6th, and bagels will go on sale March 3rd. CTbites will be in the house to help cook (and eat). We can’t wait!
