Ben McCrea is a gentle-giant of a man, but don't let his warm, friendly facade fool you. Underneath that kind-hearted shell is a mean, Auss-een, grilling machine.

In the WAY back of the lot on Fairfield Ave in Bridgeport that Walrus + Carpenter calls home, is the perch where Ben keeps watch. His job... smoking all types of meat to perfection. But what makes the man that makes the meat?

Born and raised in Melbourne, Australia, Ben gained his skills from watching his grandfather grill on the "barbie," but becoming a grill master wasn't his first passion. Ben came to the States as a boxer and did very well in that 'arena.' However, boxing is a short career and Ben knew something more awaited. What he didn't know was that it would be a smoker with a 500 gallon propane tank, commissioned by Walrus co-owner Joe Farrell (along with Adam Roytman.)

Tucked in the rear of a charming passageway on Elm Street in New Canaan is Baldanza Natural Market Cafe. With a large and diverse organic menu, and a blackboard filled with the names of local purveyors, this small restaurant is fast becoming a local favorite. Owners Sandy and Angela Baldanza opened the café last year serving lunches and an occasional ‘pop up dinner’. Baldanza recently expanded the hours to include regular dinner service and partnered with Chef Kender Urena, who many will remember as the Chef /Owner of Bistro Bonne Nuit. Urena was awarded a Grand Diploma in Culinary Art with outstanding honors from the French Culinary Institute in NYC and was one of Bon Appétit Magazine Top 100 Chefs in America in 2007.

Patrons of Washington Prime will find comfort in the cuisine of its new Executive Chef Howard McCall Jr. This unassuming chef is not new to SoNo nor the kitchen at Washington Prime; he started in the kitchen at Barcelona twenty years ago and was the opening Sous Chef at Washington Prime last summer. Prior to joining Washington Prime he oversaw the kitchen at Mint restaurant in North Carolina which influenced his new Southern style cuisine.

CTbites was invited to meet the chef and sample some of his new additions to the menu. Chef Howard exudes a soft personality, allowing his culinary talents to speak. His recent changes to the new menu range from a creative American Soul Rolls to a Braised Lamb Shank, plus modifications of previous favorites. Each maintained the focus on the main ingredient with delightful accompaniments…more akin to Southern comfort food.

The next stop on my unending burger quest found me sitting at a high top table in the rear of Bailey’s Backyard in Ridgefield. This modest two room restaurant is known for its creative cuisine with an unwavering Farm to Table attitude instilled in the entire menu by Executive Chef, Forrest Pasternack.

Many told me about the Cheddar and Ale Burger, and it was time I tried it for myself. The Burger is served with caramelized onions, cheddar & ale sauce on a brioche, with a side of shoestring potatoes.


Mediterraneo in Norwalk ... A Culinary Tour of Southern Europe

Mediterraneo, a ‘destination restaurant’ in the Hotel Zero Degrees on Main Street in Norwalk is a beautiful backdrop for Executive Chef Albert DeAngelis’ culinary tour of the Mediterranean. The aquatic inspired dining room features a large bar area to the left, with several high top tables to augment the bar seating, and to the right is the main dining room. With hardwood floors, white chairs and a large nautical flag painting along the far right wall, the dining area presents a clean and airy feel. The highlight of the room is the floor to ceiling glass wall that overlooks the panoramic, million-dollar waterfall view on the river. From a magnificent French Braised beef “Bourguignon” to a mild Tuscan Prosciutto wrapped rabbit loin to an outstanding Wild black sea bass, the menu at Mediterraneo offers wide varieties of clean flavors and combinations.  Mediterraneo is one of five local restaurants owned by the  Z Hospitality Group.


Walrus + Carpenter Launches All Pie Dessert Menu

The New Haven outpost of Harvest Wine Bar is the fifth restaurant for siblings Kleber, Nube, and Vincente Siguenza, the the trio behind Cava in New Canaan, 55 Degrees in Fairfield, Scena in Darien, and sister restaurant Harvest Wine Bar in Greenwich. CTbites reviewed the Greenwich location almost a year ago, and many of the same culinary observations apply to this newly opened New Haven outpost on Chapel Street. I stopped in recently to experience the restaurant’s $19 two-course prix fixe lunch, perhaps one of the best downtown lunch options among New Haven’s fine dining restaurants.

Two years ago Harlan Social opened as a part of the Lockworks project in Stamford amidst questions on whether the area would support the restaurant or whether the restaurant investors and the developers were visionaries. Two years later Harlan Social’s success shines as a local hang-out, an after work meeting spot, and a destination restaurant.

Harlan Social was the brainchild of Owner & Executive Chef Steve Lewandowski, who was previously the Sous Chef at Manhattan’s Abby restaurant, Gotham Bar & Grill, and Fantino in the Ritz Carlton before joining Tribeca Grill and becoming its Executive Chef. Currently overseeing the kitchen is Executive Chef Michael Sobelman, whose resume includes Sardis and Tribeca Grill with Lewandowski.  When Harlan Social opened Lewandowski immediately reached out to Sobelman to join him and oversee the kitchen.

Harlan Social recently introduced its new Fall menu and CTbites visited to sample some of the new additions.


Restaurant Re-Boot: Bistro 7 In Wilton CT

Seven is Breno Donatti’s lucky number.    His restaurant, “ Bistro 7”  is located on Highway 7 in Wilton.  “Seven is God's favorite number,” he told us, “And I also got the inspiration for Bistro 7 in the 7th district of Paris in a place called ‘Cafe Central.’”

Well, hopefully we won’t jinx anything by dubbing his re-programed farm–to-fork café in Wilton as  “Bistro 7.1.”   

With a new chef, sous chef, general manager, and a reimagined food and beverage menu,  Donatti has updated his operating system, and from what we tasted at a recent Grand Reopening,  the app is not just new, but vastly improved: less complicated and well-priced.

We began with a Roasted Root Veggie Bisque, blended with slow cooked carrots, butternut squash, parsnips, sweet potato, root spices, and garnished with a bacon chip.   Breno claims it’s even better than his award winning Butternut Squash Bisque and we don’t disagree.


Washington Prime Opens in Sono: Bustling Bar & Creative Food

Washington Prime recently opened at the entrance to the SONO “Ironworks” on the corner of Washington and North Water Streets and is already garnering positive feedback and enormous crowds each night. CTbites offered a sneak peek a couple of weeks ago and recently re-visited this high energy and bustling establishment on two separate occasions to sample the food.

Self-described as an Eating + Drinking Well, Washington Prime reflects the collective vision of locals and co-owners Rob Moss and Marco Siguenza. Moss, a native of New Canaan, is no stranger to opening high energy restaurants in Fairfield County, overseeing many over the last ten years. Siguenza is the epitome of the American dream, starting as a busboy at Match Restaurant and now 16 years later one of the owners of Washington Prime, a neighboring restaurant. The kitchen is overseen by Executive Chef Jared Falco, classically trained at the French Culinary Institute. Before moving to Fairfield County, Chef Falco honed his culinary skills at Daniel and WD-50 in NYC. The trio are now working closely to present a vibrant bar scene with delicious interpretations of tradition cuisine.


Washington Prime Opens in SONO: A First Look

The corner of North Water and Washington was alive in South Norwalk this week with the opening of Washington Prime. A soft opening on Thursday led to a throng of over 300 guests wandering in to enjoy the vibrant scene at the bar and the reservation book for Friday filled so quickly, it was shut earlier than expected. This latest addition to SONO is attracting enormous attention and a visit inside and a look at the menu shows why.

The interior includes an enormous “U” shaped bar to unwind and enjoy a beer or one of their specialty cocktails and the dining area that spans the entire length of the right side of the restaurant is heavily focused on woods and foliage. Floor to ceiling windows allow for natural light to illuminate the space, comprised of dark wood tables and “moss” encased booths. All very organic and relaxing.

The ownership of Washington Prime is no stranger to the area. One of its owners, Marco Siguenza, is cousins with the owners of Cava, Harvest, 55 Wine Bar and Scena and worked with them since he arrived in the United States in 1998. The kitchen is under the direction of Executive Chef Jared Falco, spent time in several of Fairfield County’s restaurants over the last two years from Bar Sugo, to The Whelk, and most recently Mama’s Boy Southern Table and Refuge. His opening menu shows a desire to place a modern twist on some classic dishes.

Bailey’s Backyard opened in 1999, the brainchild of Chef Sal Bagliavio, who oversaw the kitchen for fourteen years. Wanting to spend more time with his family he hired Executive Chef Forrest Pasternack in early 2013 to develop a farm-to-table menu, focused on locally produced ingredients.

Born and raised in Western Connecticut, Chef Pasternack’s love of fresh ingredients developed at an early age. His childhood included picking vegetables, fishing the waters of Nantucket Sound, and digging clams in Chatham, Mass.: all to enjoy at family dinner. This passion was both enhanced and refined when he graduated with honors from the Culinary Institute of America. Post-graduation he sharpened his culinary skills at some of New York’s finest restaurants, including Zoe with Chef David Honeysett, the BLT Restaurant Group with Chef Laurent Tourendel, Eats on Lexington with Chef Jeremy Spector, Employee’s Only and The Brindle Room. His passion for the farm-to-table movement inspired his menus at The SOHO Grand Hotel in lower Manhattan and Terra Restaurant in Greenwich. Since joining Baily’s Backyard, he has dazzled guests with creative combinations and bold flavors.


Napa & Company Gets a New Chef: Adam Truelove at the Helm

Since opening in 2006, Napa & Co. has received numerous accolades as one of the best restaurants in Connecticut with a creative and inventive menu. Co-Owner Mary Schaffer told CTbites that her vision from the start has been the “wine country cuisine of Northern California…flavorful, fresh, simply prepared food with its roots based from the European influence of wine growers coming to the area from Spain, France and Italy over the last 100 years.” The restaurant prides itself on “blend(ing) the cultures” of various cuisines. Schaffer also has a keen eye for culinary talent and last year she hired and handed oversight of the kitchen to Executive Chef Adam Truelove.

Chef Adam earned a degree in Mathematics before following his culinary passion and enrolled at the French Culinary Institute in Manhattan. After graduation, he honed his skills at Town and Esca Restaurants before returning to the FCI as a Chef Instructor. He relocated to the Fairfield County area as the opening Sous Chef at Tarry Lodge in Port Chester, the Executive Chef at Pine Social in New Canaan and eleven 14 Kitchen in Greenwich as the Chef du Cuisine. Last year Napa & Co. reached out to Chef Adam and asked him to join its team to oversee the kitchen as Executive Chef.


The Spread in SoNo 2.0…Enter Chef Carlos Baez

Twelve years of apprenticeships and hard work are now benefiting Carlos Baez, the newly appointed Executive Chef at The Spread in SONO. Baez started his career at the age of 19 and gained his culinary experience through diverse roles including a sushi chef; he smiled as he told CTbites, “I was the only Mexican sushi chef in the restaurant”.   He worked as a line cook in two top-rated local restaurants, Le Panetiere (Rye, NY) and Napa and Company (Stamford) before arriving at The Spread as one of its opening chefs.

After a few months in his new role of Executive Chef, CTbites spent an afternoon with Chef Carlos to sample a few of his newly introduced additions to the menu. The menu has a varied approach to the cuisine, with influences from American, French, Italian and Spanish cuisines while adhering to The Spread’s philosophy of offering high quality, locally sourced options, with entrées priced less than $25. I enjoyed many of the dishes but found many of the presentations a little over- or under-seasoned.

 Small plates reach new heights at Vinted Wine Bar and Kitchen, where food is anything but secondary. Add 68 wines by the glass and you’re well on your way to finding that perfect pairing. Sister restaurant to The Federal in Agawam, Vinted burst onto the West Hartford dining scene in late 2012 when owners Ralph Santaniello and Michael Presnal launched their newest venture in Blueback Square. A classy vibe, inventive array of modern American tapas, and encyclopedic wine list leaves little, if anything, to be desired.

Harvest Wine Bar, located on the lower end of Greenwich Avenue, elevates the restaurant offerings in downtown Greenwich to a much higher level. The Sigueza brothers, Vicente and Kleber, can now add another fantastic restaurant to their portfolio, which includes Cave Wine Bar in New Canaan, Scena Wine Bar in Darien and 55 Wine Bar in Fairfield. A beautiful casual dining space in the front area is dominated by a large brick wall and accentuated with wood tables and chairs.  You can continue walking to the rear of the restaurant and enjoy the long bar or tables, all with views through the large west-facing windows lining the entire rear wall of the restaurant.

Overseeing the kitchen is Chef Eben Leonard who is migrating from Scena Wine Bar where CTbites enjoyed his creativity and culinary talent on numerous occasions. His opening menu combines aspects from southern Europe, with a modern twist, to American classics.

In the Litchfield County town of Washington, the two-year old Community Table and its team led by Executive Chef Joel Viehland, stands at the center of a tight network of farmers, foragers and discerning diners. Born from agrarian collaboration rather than co-opting it, Community Table was built around the notion that a restaurant serving its community must not only serves its diners, but act with respectful stewardship of the land. This translates to sourcing seasonally, locally and sustainably, as well as pickling, drying, fermenting and composting.

Harvest Wine Bar & Restaurant, the latest venture of the Sigueza brothers, Vicente and Kleber, owners of Scena Restaurant in Darien, Cava Wine Bar & Restaurant in New Canaan and 55 Degrees in Fairfield, opens this week in Greenwich at 372 Greenwich Avenue. With large windows beckoning the guests, the modern interior is dominated by wood, stone and leather. Wood-topped tables are all hand-made and surrounded by leather backed chairs. Individual lights descend from the ceiling to create a whimsical touch to the otherwise masculine décor. The rear wall is half glass and sunsets will create an inviting end to the day to enjoy one of the signature cocktails with many of the fruit and vegetable additions juiced on site.

The menu is best described as “food inspired by the American tradition,” a steak house that meets Little Italy and embraces the sea and the farm to table movement.


The Spread in SONO: Beautiful Food...Hip Spot

Word of mouth, and great word at that, brought me to The Spread, a spanking new dining hot spot in Sono. Two months young, the restaurant is the result a partnership of four guys, all with two decades-worth of bar and restaurant experience combined, plus one young and very talented chef, Arik Bensimon. Formerly the Executive Chef of Napa & Co., Chef Arik brings the food in this rustic yet hip joint to a level of excellence and seriousness not seen in Fairfield County in some time. The Spread’s menu is global in scope. It represents a range of cultures--Arik’s Moroccan background and French training, the partners' of Costa Rica, Italy, and France with a dash of New York and California in the mix. Indeed, the menu is all over the place, locally sourced and international, but somehow this eclectic mishmash works. Though dishes are simply titled on the menu, they are, in fact, complex and beautifully executed.

With high-end restaurants like Thomas Henkelmann, Rebecca’s,  Jean Louis,  L’escale, and Polpo, the Greenwich food scene is hallmarked by special occasion dining.   Though lush and lux, the cuisines are rough on wallets and waistlines.     

At first blush, Morello’s on Greenwich Avenue seems to be part of that plush world.   The setting, a landmark Beaux Arts bank building woven with spectacular arches and ceilings tiled in golden amber by the Catalan architect Rafel Guastavino, Jr,  may be the most lavish, sexiest dining space in all of Connecticut.   Moreover, the bistro is part of the exclusive restaurant portfolio belonging to international jet setter and billionaire Marlon Abela, a collection that includes Michelin star eateries in London, as well as a Voce in Manhattan and Bistro du Midi in Boston.
