Though CTBites traditionally reviews the food created by gifted chefs in the Back of the House, we thought a story about the talent at the Front might be in order.  So who better to feature than Tony Capasso, the celebrated maître d of Gabriele’s Italian Steakhouse in Greenwich and unquestionably the biggest personality on the Connecticut restaurant scene? Actually, Copasso may be more MC than Maitre ‘d.

"My mother tells me that when I was five, I was already meeting, greeting and introducing people to each other in my apartment house," he told us. "I've always been a people person. President of my high school. Captain of the football team, I like people, they like me, and that's what this job is all about."

This article first ran on Sunday Diners, a kid's guide to the best diners and breakfast joints in Fairfield County, Connecticut and beyond. Written by 4th Grader Alex (with a bit of help from his dad). 

Usually, at this time of the year, many people make resolutions to eat healthier or not eat junk food all of the time.  One of the ways that you can do this is by eating more organic foods which are healthier for you.  Today, we went to Greenleaf Organic Bakery and Café, in Wilton, where everything is organic, fresh and TASTY!

The first thing I noticed when I walked in were the displays of amazing pastries, croissants, cupcakes, tarts and the BIGGEST chocolate chip cookies I have ever seen.  The second thing you notice, is how good it smells! The walls are decorated with photos of food and fruit, and it is a good place for kids and adults too.

I looked at the menu before we left the house and already knew what I wanted — The Fruit Explosion  - Fresh organic cream, layered with organic strawberries, blueberries, raspberries, yogurt, granola, all topped off with chocolate hazelnut spread.  It was beyond good and… healthy at the same time.  It was also BIG!  Do you know what else was BIG? The Organic Hot Chocolate – which is made with real melted organic chocolate and whipped cream – it was GIANT!  Bigger than our cereal bowls at home – now that’s BIG!


Harvest Wine Bar & Restaurant Opens This Week in Greenwich

Harvest Wine Bar & Restaurant, the latest venture of the Sigueza brothers, Vicente and Kleber, owners of Scena Restaurant in Darien, Cava Wine Bar & Restaurant in New Canaan and 55 Degrees in Fairfield, opens this week in Greenwich at 372 Greenwich Avenue. With large windows beckoning the guests, the modern interior is dominated by wood, stone and leather. Wood-topped tables are all hand-made and surrounded by leather backed chairs. Individual lights descend from the ceiling to create a whimsical touch to the otherwise masculine décor. The rear wall is half glass and sunsets will create an inviting end to the day to enjoy one of the signature cocktails with many of the fruit and vegetable additions juiced on site.

The menu is best described as “food inspired by the American tradition,” a steak house that meets Little Italy and embraces the sea and the farm to table movement.


Bistro Latino: Chef Rafael Palomino Comes to Old Greenwich

Acclaimed chef, author and restaurateur Rafael Palomino recently opened Bistro Latino in the space first occupied by Boxing Cat Café and then Greenwich Tavern in Old Greenwich.  The vast dining room has been done over in dark wood flooring which is flanked by racked walls that flaunt an extensive portfolio of international wines. 

Palomino won his food-star stripes when he opened Sonora in Manhattan almost two decades ago, introducing Manhattan to Nuevo Latino cuisine, and earning raves from the city’s food critics. Sonora's wild success inspired Rafael to bring his unique cooking style to satellite restaurants in New Haven, Tuckahoe, and Bethlehem, Pennsylvania.  Sonora now lives in Port Chester.

Despite its name, Greenwich's Bistro Latino is not really Nuevo Latino since the dishes are more of Spain than Latin and South America.  Rafael has created a menu that features European tapas and paella -- which he anoints with flavors from his Columbian and Queens roots. "Spanish bathed in Picante Style," is how the restaurant describes it.  As a result, Bistro Latino is really more about invention than tradition.

Mangia, Mangia Mangia…and Mangia again.

Pasta Bolognese..a dish so embedded in the DNA of Italian culture that the Italian Academy of Cuisine registered a recipe for "classic Bolognese ragù" with the Bologna Chamber of Commerce. The recorded recipe calls for beef from the plate section, unsmoked pancetta, carrot, celery, onions, tomato purée, meat broth, dry wine, milk, salt and pepper, plus a small amount of cream as an option to finish the sauce. There are numerous variations and nuances in the design, flavor, ingredients and most importantly the partner on the plate, the pasta, traditionally a taggliatelle.

What started as a simple idea within CTbites to find and recommend a few good Pasta Bolognese dishes in Fairfield County took a life of its own as more suggestions led to more great sauces, which led to, well more great sauces. Over the last several weeks, the two of us have enjoyed some great Pasta Bolognese preparations (and several that were not so good) to give our readers a list of recommended restaurants that serve delicious versions of this traditional Italian fare. It is not all encompassing, is listed alphabetically and we look to our readers to offer other suggestions of restaurants that serve their favorite Pasta Bolognese to be included in next year's search.

And this is only part 1…there were too many for just one list of recommendations, so stay tuned for part 2 in the near future.

With high-end restaurants like Thomas Henkelmann, Rebecca’s,  Jean Louis,  L’escale, and Polpo, the Greenwich food scene is hallmarked by special occasion dining.   Though lush and lux, the cuisines are rough on wallets and waistlines.     

At first blush, Morello’s on Greenwich Avenue seems to be part of that plush world.   The setting, a landmark Beaux Arts bank building woven with spectacular arches and ceilings tiled in golden amber by the Catalan architect Rafel Guastavino, Jr,  may be the most lavish, sexiest dining space in all of Connecticut.   Moreover, the bistro is part of the exclusive restaurant portfolio belonging to international jet setter and billionaire Marlon Abela, a collection that includes Michelin star eateries in London, as well as a Voce in Manhattan and Bistro du Midi in Boston.

The 3rd annual "Farm 2 Fork" dinner series will officially begin on Wenesday,  June 20th at Millstone Farm, 180 Millstone Rd., Wilton, CT. Those of you who have enjoyed these wonderful communal dining experiences in the past, are likely already drafting that email for reservations. For newbies, here's what to expect. A tour of the beautiful 75 acre Millstone Farm will begin at 6:00PM followed by a pristinely farm fresh, family style dinner beginning at 7:00PM. The cost is $100. per person with a featured wine. BYOB is welcome. Tax & gratuity is excluded.

Millstone Farm has just announced a few more workshops going on at their beautiful 75-acre working farm in Wilton, CT. For those unfamiliar with Millstone, heir focus is on rebuilding our food community through small scale agriculture, educational activities, and events. Millstone raises pastured heirloom breed sheep, pigs, and poultry, and grow vegetables for their CSA, local chefs, and family owned markets. They do wonderful events and workshops with top chefs and guest speakers. Here is the spring lineup including "Backyard Composting" and "Foraging & Cooking with Wild Edibles." 


Chipotle in Greenwich Now Open: Free Tacos April 16

The Mexican-inspired food trend is at a fever pitch with the opening of the third Chipotle in Fairfield County today on Greenwich Avenue in Greenwich, CT. The tenth location in Connecticut and third in Fairfield County, their soft opening is tonight, April 16 from 5 to 7 p.m. They will be offering patrons the entire menu and fountain drinks at no charge for today only. A liquor license is pending.

Chipotle is now open at 49 Greenwich Avenue in Greenwich, CT. Hours are Monday through Sunday, 11 am to 10 pm, tel: 203.625.5394.

Several of us performed the enviable task of judging six of the great pizza combinations that readers submitted to determine which would be included on the menu of Pizzeria Rosso’s new location in Greenwich and the combination that will earn the title of “CTBites 2012 Pie Combo.” And true to the mission of CTBites of guiding our readers to delicious food, all of them were so fantastic that Owner / Chef Pat Pascarella agreed that ALL OF THEM will be included on the Greenwich menu.

It must have been good karma to take over the former Wave Hill bread kitchen in Wilton, because the AMG Cooking School, which opened it’s doors in July, has truly found the right ingredients for success. 

Alison Milwe-Grace and her partner, Olivia Savarese, are not new to cooking having run a catering and event planning business for years. When the professional kitchen space at the old Wave Hill Breads came on the market, they saw an opportunity and jumped at the chance to open a cooking school. They have been hosting both adult and kids classes ever since.

The good friends added their own personal touch to the space. Gone are the wooden bread racks and flour dusted floors. A cozy candlelit living room and dining area serves as the entrance, while the kitchen features a huge work area complete with famous chef quotes on chalkboards to serve as inspiration. 


Pizzeria Rosso Expands to Bridgeport & Greenwich

Pizzeria Rosso is opening up not one, but two new locations in Connecticut in addition to their original Norwalk take-out outpost which has been open just under a year. [Read: Pizzeria Rosso Opens in Norwalk, June 2012

Pasquale (Pat) Pascarella is the chef and founder of the successful yet still young pizzeria.  His second Pizzeria Rosso is set to open at 960 Main Street in Bridgeport in just about three weeks. The new Bridgeport location will be open seven days a week and boasts forty seats with two four-pie Baker's pride ovens. The menu will be largely the same, but more of a focus on pizza and less pasta and will be BYOB with the possibility of a future liquor license. With Webster Arena just up the street and the Barnum Publick House opening across the street, Pizzeria Rosso will be open until 2 a.m. on Friday and Saturday night.

A third location will open in Greenwich, giving Pizzeria Rosso the run of Fairfield County.

“What’s a nice Greek girl like you doing running a place like this?” I ask Maria Pertesis, who with her mother Katrina, has just opened Cactus Rose, a vibrant new Southwestern themed cantina in Wilton.    “My family has owned a Greek diner in Fairfield for almost 40 years,” she offers. “So my mother and I wanted to try something new and exciting.”  

And that’s exactly what these amazing women have wrought.  Under their husbandry, the former Mediterranean Grill in the Wilton Center has blossomed into a fun-filled, warm, and welcoming hacienda. Indeed, the restaurant came up almost overnight, as if itself a desert flower.
