The Whelk: Bill Taibe's Inspired Seafood in Westport

Restaurant American Bill Taibe Cocktails Farm to Table Local Farm Seafood Westport

Chris Grimm

The last year has given Westport three high-profile (if completely divergent) openings. Danny Meyer's Shake Shack opened its first venture into Connecticut and shook-up the Westport fast food scene and Mario Batali and Joe Bastianich opened a second Tarry Lodge in Saugatuck, bringing a different twist to traditional Italian restaurants. Finally, Chef Bill Taibe, the James Beard nominee and Owner / Chef of LeFarm opened The Whelk, his second Westport restaurant, on the Saugatuck River, just a short stroll from Tarry Lodge.

The Whelk, named after a sea snail similar to a conch, is primarily focused on seafood and addresses an oddly unexploited niche, a high-end seafood restaurant on Connecticut’s Gold Coast.  For that reason alone, I was especially interested in The Whelk, and thus began my exploration, with multiple visits to this award winning kitchen.

South End: A Modern Tavern Opens in New Canaan

In early July CTbites previewed the opening of South End, the newest addition to the New Canaan restaurant scene.  Nearly two months of frenzied activity has confirmed the local appreciation that the creative cuisine of Chef Nicholas Martschenko is alive on Pine Street.

Overseeing the front of the house is Keith Siskind, his business partner, and the duo redesigned the interior at South End to create a relaxing atmosphere by intertwining rustic charm with modern comfort. The tables are carefully arranged to allow for pleasant conversation and the overall noise level creates a vibrant buzz without overwhelming intrusion. With upwards of 85 seats, 30 of which are contained around the energetic bar area, South End offers pleasant ambience to enjoy the wonderful cuisine that emerges from the kitchen.

The duo’s ambition to create the “Modern Tavern” is a rousing success. Siskind developed an excellent relationship with two local breweries, New Canaan’s Charter Oak and Stamford’s Half Full (Bright Ale) and both are prominently displayed on the taps overlooking the bar.

The Chelsea in Fairfield: A New Chip Off the Old Block

Amy Kundrat

Instantly familiar, yet completely new, Fairfield’s six-week-young The Chelsea has already settled quite nicely into the dining scene. With an Unquowa Place address, a steady lunch and a boisterous evening crowd–its practically a Fairfield County regular.

This is thanks in large part to a familiar and accomplished trio of owners responsible for creating many hot spots we know and love: Scott Beck, co-owner of Match and The Loft in South Norwalk; Matt Storch, Chef and co-owner of Match in South Norwalk; and Kevin McHugh, Co-Owner of Grey Goose in Southport and Spotted Horse in Westport.

Beyond the obvious street cred, the palpable success of the restaurant is found in the breeziness of its well-designed space (McHugh’s cozy palette of reclaimed rough sawn wood, white subway tiles and raw glass fixtures) paired with a globally-inspired menu long on classics. The Chelsea’s menu is a witty take on many dishes we all know and love, combined with a consistency of quality that comes from veteran owners and chefs who know the Fairfield County appetite very well.

Harlan Social Opens in Stamford's Harbor Point

Restaurant American Stamford

Lou Gorfain

Steven Lewandowski knows something about breaking new ground. He worked at Montrachet, Drew Nieporant’s’s transformative French restaurant that ignited a dining renaissance in once grim Lower Manhattan.

"I think we can change the game here, too," Lewandowski told CTBites during a recent preview of his new Harlan Social at Harbor Point, the amazing redevelopment project now bourgeoning on Stamford's South Side.

"When we first checked the area, it was a bit desolate. Like Tribeca when my friend Drew came in there. But when I saw that Fairway was here, I just knew this would be a good home for us, too.

Fade Out. Fade In. One year later.

Harbor Point is booming and Lewandowski is about to find out if his multimillion dollar bet was on the money.. On August 7th, Harlan Social opens its doors, the first high end restaurant in HP. ("Harlan" is his son's first name, "Social" because the restaurant will be a gathering place for the thousands of people who will soon live, work, play ... and, yes, EAT ... in Harbor Point.)

Behind the Scenes: Napa and Company's New Chef Marino

Napa and Company in Stamford has a new, very talented chef overseeing its award-winning kitchen. Chef Leonardo Marino is slowly modifying the menu to showcase his commitment of using exceptional ingredients to highlight their natural flavors. Three weeks after assuming Napa’s Executive Chef position, CTbites sat with Chef Leo for this “Behind the Scenes,” review, discussed his passion for food and sampled several of his recently premiered dishes.

Chef Leo’s devotion to cooking started at an early age as he assisted his mother and aunt in the kitchen; they inspired him to pursue a culinary education.  After attending the Culinary Institute of America, his philosophy of accentuating the natural flavors was further influenced in the kitchens of some of America’s greatest chefs. While working as the Lead Sous Chef for Eric Ripert at Le Bernardin, Ripert asked him to relocate to Washington DC to take the reins of Chef de Cuisine at Westend Bistro by Eric Ripert. Chef Leo returned to New York in 2009 and joined David Bouley at both Bouley and as the Chef of Bouley Upstairs.

Road Trip: 116 Crown in Downtown New Haven

116 Crown (“One-Sixteen,” as its known to loyal patrons) arrived on the downtown New Haven scene in 2007 with little fanfare, but its impact was immediate and resounding. Nothing quite so chic, so stylish, had been seen in the Elm City. With its lit up green onyx bar easily visible from the street, 116 stood out as a beacon of alternative dining and nightlife, easily distinguishable from the loud clubs and Irish pubs on nearby blocks. A sophisticated crowd sought out the modestly sized space in search of haute mixology creations – extraordinary cocktails containing exotic ingredients – and worldly small plates to nibble on.  The perfectly pitched décor, highlighted by impressive design touches like an iconic bright blue Bang & Olufsen phone at the hostess stand and foot pedal-operated sinks by the bathrooms, and an undeniably hip ambiance perpetuated by a fantastic of-the-moment musical playlist, kept the cool kids coming back.

At 5:44PM on the first day of spring, March 20, 2012, the kitchen at elm Restaurant in New Canaan hummed to life as it received an order from the dining room. This was no ordinary order, it was the restaurant’s first. The order ticket began…Appetizers – 1 grilled Spanish octopus, 1 citrus cured hamachi, 1 local lettuces from Millstone Farm, 1 roots, shoots, fruits and leaves, and 1 soft farm egg ravioli… elm was officially open. The outstanding staff that Chef Brian Lewis had assembled sprang to action. The months of planning, the weeks of training, the hours of preparation were now tested as the guests arrived and the orders placed.

The Making of the MATCH Restaurant Burger

Restaurant American Norwalk Comfort Food Burgers

Jeff "jfood" Schlesinger

Start with a patty of locally raised (Roxbury, CT) grass-fed beef. Throw in some bacon-cheddar sauce and sweet and sour onion jam. House it all on a caramelized onion brioche bun. And don't forget those fries.

No, this is not a new burger joint, this is Match's new Thursday Night Burger offer and CTbites was there for its beefy birth.

CTbites sent burger guru, "jfood," into the kitchen with Match Restaurant's Chef Matt Storch to develop this recent menu addition. From concept to reality, we bring you the new Match (SONO) Hamburger. Here's how it went down.

SAILS American Grill Opens in Rowayton

Restaurant American Norwalk Rowayton Lunch

Christy Colasurdo

When the River Cat shuttered its doors in March, after 12 years on Rowayton’s main drag, the closure of the beloved neighborhood restaurant and bar left a gaping hole in Rowayton’s dining and social scene.

So when I returned to check out the recently launched SAILS, a new American bistro with a spiffed up nautical vibe, I wasn’t surprised that the highly polished teak bar was three-deep with old-timers and new fans, making themselves right at home in a familiar, yet completely transformed haunt.

Match Restaurant in Sono: 11 Years...A Visual Journey

This year marks Match's 11th anniversary, an honor and milestone that most restaurants can only hope to achieve. Instrumental in revitalizing SoNo and its thriving restaurant scene, Match has flourished throughout the years by providing diners with an immersive and engaging dining experience that delivers on all fronts.  The menu never disappoints, always featuring Match classics alongside daily and seasonally inspired dishes, never pausing to get tired or predictable. The friendly and competent wait staff, under the watchful eye of Managing Partner/Co-owner Scott Beck, sets the tone in the front of the restaurant, conversing knowledgeably about each dish's preparation as well as the expertly chosen wine list.

Match marries the ingredients for success masterfully, but for my money, Match's success really lies in the kitchen. The secret to staying on top for 11 years and what really sets Match apart from the pack is Executive Chef/Co-owner Matt Storch's playful approach to cooking as well as his ability to constantly create and innovate in the field of new American cuisine.

With Match's numerous "best of" awards for both their menu and wine list, and a long list of accolades from the traditional media, we wanted to tell you a different story. In fact, we felt it most compelling to simply show you. The following represents some of our favorite selections from the Match menu, ones that highlight Chef Storch's ability to layer flavors, textures and truly varied ingredients with great success. One night...one long meal… This is not a CTbites review. This is food porn.

Bonda Restaurant is Back...Now in Fairfield

Restaurant American Fairfield

Margie Treisman

If you liked Bonda at its former Westport/Saugatuck location, you’ll love its new incarnation in Fairfield’s Greenfield Hill (the former home of La Colline Verte and Fraiche). Sure, we miss Abbondanza – owner/chef Jamie Cooper’s former Saugatuck gourmet deli/catering operation and site of the original Bonda.  But we’re excited he’s now focused on the restaurant and taking it to the next level in this new location.  It’s a clean, inviting space, with warm orange walls, fresh white trim, vintage posters and comfortable seating. The small, sixty-seat restaurant was nearly filled to capacity when we visited on an otherwise quiet Tuesday evening in October. For good reason. In fact, for at least three very good reasons.

Reason 1:  The Bond-alicious food.  Inventive yet simple dishes, expertly prepared.  Although the menu has a classic American backbone, Jamie treats the world as his pantry.

The Gray Goose: Classy Comfort in Southport

Restaurant American Southport Comfort Food Lunch

Sarah Green

I've always enjoyed getting GOOSED. Now, I can get goosed whenever I want to and it won't even make my husband jealous. In fact, I'm sure he'll enjoy getting GOOSED too at THE GRAY GOOSE, a tasty new lunch and dinner spot in Southport. The menu is classy, interesting and full of simple creative dishes, prepared with skill by executive chef Tom Carney (previously of Spazzi in Fairfield.) The restaurant, which formerly housed The Wine Knot, is situated in a charming, 100 year old building, creating an idyllic spot for restaurant developer Kevin McHugh, (previous co-owner of Little Pub in Ridgefield, Match, and the Loft Martini Bar in Sono) and his business partner, Tommy Febbraio. With fresh and inviting decor, McHugh and Febbraio have utilized reclaimed materials to create old wood floors, exposed beams and stone fire places (inside and out) and added modern lighting to juxtapose and to induce a crisp new feel.

A Hidden Gem Shines in Norwalk

Restaurant American Catering Norwalk Breakfast Lunch

Stephanie Webster

Last Saturday night we followed an anonymous tip from a ctbites reader...a reader I need to thank. Apparently, in a small shopping center off Main Street in Norwalk sat a food gem, a hidden treasure with beautifully prepared organic and local sustainable produce..or so this reader said. The restaurant was Nicholas Roberts Gourmet Bistro. The restaurant's web site revealed a catering company open for breakfast, lunch and Thur.-Sun. dinner dining. We were skeptical as we pulled up to the non-descript exterior, flanked by Hot & Speedy Pizza. However,  as we walked past the glass case of wonderful looking prepared foods, the thrill of finding something undiscovered was upon us. We were directed to a casual but pleasant dining room with about 10 tables. Candles and trees donned with Christmas lights provided relaxed lighting, while chalk signage covering several black board painted walls gave a whimsical flourish to this minimally designed space. We handed over our wine (as it is BYOB) and hoped for the best. Spoiler alert....It was one of the most inventive and delicious meals I have had in Fairfield County. If this is the first you are hearing of Nicholas Roberts..make this your next meal out.

CLOSED!! Fraiche in Fairfield: Eclectic Comfort Food

Restaurant American Fairfield Comfort Food Lunch

Sarah Green

Once upon a time, in a tiny strip mall on Hillside Road in Fairfield, there lived a most unusual and slightly confused restaurant named Fraiche. Fraiche wasn’t sure if it was a bistro or a burger bar; it didn’t know if its decor was very modern (a la Jonathan Adler - complete with fake deer heads) or remarkably old fashioned (not unlike my grandmother’s apartment, complete with chipped antique china plates on the walls); it hadn’t made up its mind whether to lure you into its intimate back room or interrogate you with its incredibly bright lighting (remedied immediately upon request). But one thing was for sure - there was no confusion about the quality of food. The food at Fraiche - it's ecclectic, it’s inventive, and of course - it's fresh!
