Due to the pandemic, many families have primarily been eating at home for the past year. Home-cooked meals are great but can get monotonous, and let’s be real -- sometimes you just don’t want all the work. Jackie Mendive, the founder of Empanadas On The Go, said her journey began by preparing empanadas for her family and friends. Mendive grew up in Argentina, and she wanted to keep her upbringing and culture alive. Jackie says she would often think to herself, “I wish I could just order them online” since the actual preparation was extremely time-consuming. In January of 2017, she decided to begin selling her empanadas to local families. Since then, Empanadas On The Go has expanded to all of Fairfield County, Westchester County, as well as delivering to Manhattan and Brooklyn. Shipping is also available.

Jackie’s Empanadas On The Go offers a variety of artisanal Argentine food including frozen and par-baked empanadas, quiches and tartas, and numerous sweets. There are 14 varieties of empanadas. The Assorted Best Seller package, a customer favorite, contains a dozen empanadas consisting of beef, chicken, spinach, and ham and cheese.

These empanadas are extremely easy to bake at home. Once the frozen empanadas are taken out of the freezer, you can just place them on a lined baking sheet. Then, you brush them with an egg wash and pop them in the oven for 15- 20 minutes. Seriously, these are so easy to bake! I thoroughly enjoyed them all, but my personal favorite was the ham and cheese empanada; the flakey pastry dough perfectly complemented the salty, creamy ham and cheese filling.

For years, Mendive and her family have donated to the charity CONIN Del Viso, which helps fight infant malnutrition in Argentina. Jackie now contributes to this charity so “a bite of every empanada goes toward a good cause.” 

Mendive and her crew operate out of a commercial kitchen that’s open all week.
