I often fantasize about waking up to a 6 pack of donuts and a warm bacon egg and cheese sandwich nestled on a freshly made biscuit. Seriously…all the time. I’ve got issues. Well, now there is a ghost kitchen in Westport, CT where such dreams can become a reality…and they did last weekend. Introducing Grammie’s. For those not familiar with the concept of a ghost kitchen, it just means there is no actual restaurant—not in the traditional sense. You can't come and cozy up to a table, but you can order Grammie's donuts, cronuts, flakey biscuits, croissants and breakfast sandwiches (made on ANY of the above freshly baked carbs) for curbside pickup and delivery through their website. Yup. Lay in bed and hit send…Voila!

Grammie's, which opened last week, is a brainchild of owner, Charlie Gilhuly, a name you may know from the local CT culinary scene. He was the manager for Chef Brian Lewis at both OKO and The Cottage in Westport, and you may have seen him at Walrus & Carpenter back in the day. He and his wife, Molly, who owns Manna Toast (also in Westport) had a hand in bringing this breakfast ghost kitchen to life.

Chef Ruben Palma is the creative culinary force behind Grammie’s, and he also has some serious creds. Palma was the head chef at Versailles, and most recently the pastry chef at Gabriele’s, both in Greenwich. He brought the beautiful flaky croissants and cronuts to the menu, which Gilhuly sites as the game-changing moment in menu developments for Grammie’s.

Gilhuly says “I had two grandmothers who were great cooks, and they were very much the inspiration for Grammie’s.”

The menu is simple. Whether you’re feeling sweet or savory, breakfast for me always begins with Grammie’s Biscuit Sandwich, complete with house-made chorizo, egg, hash brown, and cheese on a just-out-of-the-oven biscuit. If you’re feeling French, by all means try the Croissant Sandwich, the same situation but on their signature pure butter croissant, with your choice of house-made chorizo, sausage, or bacon. If you wanna go really crazy, enjoy the above on a cronut (you know those donut, croissant hybrids). Mhmmm….It’s a thing.

Why are these breakfast sandwiches special? The homemade baked goods and made with love components are obviously part of the answer, but it is worth noting the stroke of brilliance that is the hash brown inserted into the sammies. Honestly…game changer. I’ll never eat another BEC without one.

And then, there are the donuts which can be purchased individually or in a 6-pack or dozen. Whether you are a fan of cake or yeast risen donuts, there is a little something for everyone. You can also purchase cronuts in a variety of flavors including, vanilla, passionfruit and caramel, as well as the aforementioned biscuits.

Much like the hash browns, we need to have some words about these biscuits. I have to be honest. in my 11 years of residency I have yet to find a decent biscuit in the state of CT . Sure, I haven’t been everywhere, but after spending a good deal of time in New Orleans, I appreciate a well made flakey, light buttery biscuit. You will find those here.

You can also score coffee alongside your breakfast order. Oh thank god.

All in all, we are down with Grammie’s. You should be too.
