Cask Republic has now opened its third Connecticut location in the heart of downtown South Norwalk serving globally inspired, chef-crafted American fare in a welcoming, warm and lively atmosphere. Located at 99 Washington Street, the restaurant offers local residents and visitors a great place to enjoy casual but well executed fare, a superior selection of beer, wine and craft cocktails. Cask Republic eclectic interior is inviting with hardwood floors, intimate lounges, and expansive floor to ceiling windows which creates a casual yet welcoming aesthetic. A full length oak bar takes center stage in the main dining room set below television screens and surrounded by booths and communal tables seating upwards of 100 guests, perfect for after work and weekend gatherings with colleagues and friends. You will also be able to catch your favorite sporting events on the two large-screen televisions. In the Spring, the 60-seat outdoor patio will be available for dining alfresco in a garden-like oasis featuring a fountain, cozy couches and lush plantings.

The menu, created by Culinary Director Carl Carrion, features a contemporary take on traditional, seasonal, and globally-inspired dishes that are updated and elevated to a gourmet level. Savory menu selections are filled with plentiful plates that change seasonally depending on the availability of fresh, local and regional ingredients. The basic dining philosophy is creating comfort-inducing food using the highest quality of ingredients and serving it in a comfortable and welcoming setting. In addition to some of Cask Republic’s signature dishes, the menu will also feature delicious entrees such as the Maple Brined Double Cut Pork Chop, Mustard Crusted Canadian Salmon and a savory take on Shrimp & Grits using grilled tiger shrimp, cotija cheese and an Andouille sausage vinaigrette. Side options for the veggie aficionados will include Sauteed Swiss Chard and Wild Mushrooms with Roasted Brussel Sprouts topped with an I.P.A. glaze.
Cask Republic, already known for their extensive, highly curated selection of craft beer, also features eight wines, sangria, custom cocktails and cold-brewed coffee all on tap in the South Norwalk location. This elevated beverage program showcases a unique craft cocktail menu using freshly squeezed juices, in-house spirit infusions and ultra- premium bitters. Dining pairings will also be available.
Lunch service is offered Wednesday through Sunday at 11:45am. The bar opens at 4:00pm daily and dinner service is served seven days a week beginning at 5:00pm.
