Saugatuck Craft Butchery Moves in Westport w/ New Take-Out Menu & Kitchen

Just a quick hop, skip and a purely sustainable, pasture-fed jump across Riverside Ave is the spankin' new Saugatuck Craft Butchery, now re-opened for business in Westport! Owner Ryan Fibiger and crew are ready and waiting with a crisp, clean, larger locale complete with a larger retail space as well as a complete, working kitchen where fresh, prepared foods are being made for purchase. Head Chef Mark Heppermann and his sous chefs have begun with sandwiches and salads, all made with the freshest ingredients. Meat from well...that's obvious, veggies pulled straight from the earth of the edible gardens - courtesy of Homefront Farmers - that surround the shop, and breads delivered daily from ELI's and Balthazar in NYC. The day we visited, we were pleased to find a Lamb Meatball Sandwich with pickled red onions and house made hummus as well as a gorgeous "Beets Me" salad with Quinoa, watercress and goat cheese. 

Why the switch? Not only for the obvious increase in total space, but also for some exciting new offerings that Fibiger and the rest of the highly trained and incredibly knowledgeable staff at Craft are proud to present. Of course, the butchery shop is #1 on the priority list, with ALL meats sourced from local farms and ALL animals pasture-fed and NO pesticides or hormones of ANY kind used.  But with this extra space, Craft will be offering cooking classes in a kitchen designed specifically for that purpose. Also, coming soon, a monthly dinner series where 20 or so lucky food-lovers will be treated to amazing, seasonal dishes sourced from local farms around Connecticut. 

For now, there is seating inside for 10 (the most allowed before the "town" considers you a restaurant), 6 at the counter and a 4 top right by the window. Ryan will be opening the patio for seating as well and there is plenty of parking at this new location, including spots around the back on Ketchum Street.

If you are looking for delectable and sustainable meats and prepared foods,  Craft is the place to purchase - with their "nose to tail" approach, there is virtually no waste and knowing that the animals that are sourced have been treated in the most humane way is good for the spirit as well as the taste buds.
