Super Bowl Eats: Match Restaurant's Wing Recipe

Nothing says Super Bowl more than wings and beer, so why not do it right and cook up some of our own with the help of Chef Matt Storch of Match Restaurant in Norwalk? Check out Matt's ultimate "man-cave" recipe below. However, if you're hosting a crowd and you'd rather leave the cooking to the pros, Match is offering a Super Bowl to-go menu with all the classics. Match Restaurant Wing Recipe

20 lbs wings cut for leg and winglet

Brine:

8qt water

1pt salt

1pt sugar

1. Brine Wings in mixture for 12-24hours

2. Drain and Dry

3. Rub the wings in the following mixture:

2oz garlic powder

1oz paprika

1oz Smoked paprika

1oz chili powder

1/4oz cayenne

½ lbs brown sugar

2oz red wine vinegar

2oz salt

1/2oz black pepper

1oz Worchester

4. Bake on flat pans for 20 minutes

5. Cool (or Freeze for Later use)

6. Fry till crispy and toss with 1 Part Franks Red Hot,  ½ Part molasses, and ¼ Part butter simmered together

Recipe easily breaks down for smaller amounts of wings.

Molasses? UGH. I honestly don't see the need to improve on the REAL buffalo wing. Wings fried from raw till very crisp and tossed with equal parts Red Hot and butter. It's a perfect food that is perfect in its simplicity. No need to mess it up in the interest of being "fancy." Are you going to garnish them with micro cilantro too? Pssshhh.

@Rlam...Thanks for the comment...It is all about personal preference, I love wings but I am not a fan of super spicy so the addition of molasses tones down the HOT in Franks Red Hot creating a nice sweet-sour-spicy effect that I love so much. I do love the classic recipes but I also enjoy trying to improve them, give it a try, or at least use the brine-bake-fry method, you may be pleasantly surprised! I will pass on the micro cilantro on this recipe but I do use it on my classic rendition of Pho now on the menu at the restaurant, come give it a try and please say hello when you are in! Enjoy the super bowl and don't forget to pick up some tasty snacks for the game at Match! Thanks CTBites team!!!

We ordered from Match's special carry out menu for our Super Bowl party and the food was both fantastic and incredibly easy to heat up and serve. We had several types of pizza (including a comp Margarita that Match provided - thank you) that cooked up crisp and very tasty, tuna tartare on crakers that was a big hit with all, shrimp ceviche on delightfully light wontons and, of course, wings! The wings are both sweet and hot and hit all of the right notes and came with extra sauce, celery and carrot sticks. We hope to make Match's Super Bowl menu part of every Super Bowl party we host.

Just made these wings last night and they were AMAZING...However, I did not use the molasses, b/c I wanted the more traditional buffalo wings flavor and thought the sauce would taste more like a spicy barbecue sauce, since molasses is a key ingredient in most bbq sauces. That being said, in order to achieve that sweet and spicy effect that Matt mentioned, I added (about 1/4 part) of blue agave syrup. I also made them with drumsticks instead as we wanted more meat with all this delicious flavors....It was delicious!!! As my husband said, I think I'm now the "girl who brings the wings" to parties ;-)
