Robert Sinskey Wine Dinner @ The Dressing Room
On Tuesday, February 22nd, 7PM, The Dressing Room will host a very special wine dinner featuring the organic and biodynamic wines from Robert Sinskey Vineyards. Dressing Room Chef Jon Vaast will create a five-course farm-to-table menu that will pair perfectly with Sinskey’s elegant selections. The complete menu for this evening is below.

I know some of you are wondering...what are biodynamic wines? Often referred to as “beyond organic,” biodynamic farming is similar to organic farming in its use of manures and composts and its exclusion of the use of artificial pesticides and fertilizers. Unlike organic farming, biodynamic farming uses fermented herbal and mineral preparations as compost additives and field sprays, and uses an astronomical planting and harvesting calendar. Biodynamic agriculturalists view the farm as one entity within which all organisms – plant, insect and animal alike -- are interdependent upon each other for fertility and sustainability. Believing that winemaking begins in the vineyard with healthy grapes that come from healthy soils, Robert Sinskey began using organic farming techniques at his Napa and Sonoma Valley vineyards in 1991. Upon seeing the improved results in his wines from organic farming, he then slowly transitioned to biodynamic farming practices. WOW - this will be an incredible edible evening! im a huge fan of the dressing rom AND an even bigger fan of sinskey's beautiful wines (though i admit i don't know some of these wines, which is even better i get to try them with yummy food). HOORAY!
I love the Sinskey wines and the food at The Dressing Room. I can't wait for this event.
I know the gentleman from the winery who is speaking, Eric Sothern. We met at the Aspen food and wine festival a few years ago. Apart from being an amicable fellow, he is an absolute authority on all things Robert Sinskey Vineyards and all things related to biodynamic farming. No doubt the food and wine will be stellar, but i think this will also be a highly educational evening.
There are many intriguing aspects to biodynamic farming; the use of animals such as sheep and goats to keep the weeds down and fertilize at the same time! Friendly insects instead of pesticides and planting certain flowers to attract the pests to the flowers not the vines. Always something new to learn! Can't wait to taste and learn! thanks.
Love Sinskey wines--one of a handful of excellent domestic producers that I admire and like to drink. thanks for bringing this producer and biodynamic practices into the forefront. In Manhattan, Appellation Wine and Spirits on the west side, carries a nice selection of his wines.
Loved the piece, but I have a question. How much manure is in the wine and will it give me a headache the next morning? I'm allergic.
