GreenChic: Shrimp in Spicy Garlic Adobo Sauce

I like to periodically check out the local blogs to see what culinary feats the Fairfield County home cooks are coming up with. One of my favorite places to browse for healthy recipes with seasonal ingredients is Jennifer Spaide's GreenChicLife.com. As a nutritionist, Jennifer uses her vast knowledge to create recipes that are both flavorful and packed with nutrient dense ingredients.  

Here's what Jennifer has to say about why you should make this dish in your home (other than it just looks great): Shrimp are a healthy addition to any diet. Aside from being an excellent source of low-calorie, low-fat protein, shrimp boast a high concentration of many important nutrients including selenium, vitamin B12, and omega-3 fatty acids.  Selenium is a powerful antioxidant that helps protect against cancer and other degenerative diseases.  Vitamin B12 is a key factor in cardiovascular health.  And the omega faty acids are anti-inflammatory as well as heart protective.

Shrimp in Spicy Garlic Adobo Sauce

Serves 4 

1 lb medium-large shrimp, peeled

1 cup crushed tomatoes

1 chipotle chili in adobo sauce, minced

1 tbsp adobo sauce

1 tbsp garlic

Handful of chopped fresh parsley

Juice of ½  lime

2 tbsp Olive oil

Salt & pepper 

Combine the tomatoes, chili, and adobo sauce.  Heat the oil in a medium sauté pan over medium-high heat.  Add the garlic and sauté for 1 minute.  Season the shrimp with a pinch of salt and pepper then add to the sauté pan, stiring to coat with the garlic oil, and cook for 1-2 minutes, until they begin to turn pink.  Add the chipotle tomato sauce, stir well, and simmer gently over medium heat for 5-7 minutes, until the shrimp are cooked through.  Stir in the parsley and lime juice before serving.  Season with salt and pepper to taste.  

Serve as an appetizer, or over rice for a main dish.
