Ask Chef Nicole: Healthy Apple Granola Muffins

You asked for it, so here is another great snack idea for your kids (that you older folks will enjoy as well).  You have likely made several trips to the farm by mid- October, or feel like you are mid-orchard as you stroll through the overflowing piles of fresh apples and pears at your local market. In keeping with the season, I came up with these delicious muffins as a perfect anytime snack... plus they freeze beautifully. For a little extra decadence, spread on some fresh apple butter. Please note that pears can be substituted. Enjoy, and tell your kids to post their opinion on the site!

 

Healthy Apple Granola Muffins 

2 C. all-purpose flour

1 C. granola without raisins

2/3 C. brown sugar

3 tsp. baking powder

1 tsp. salt

1 tsp. apple pie spice

2 eggs

¼ C. apple cider

¼ C. canola oil

1½ C. grated apples

 

Directions:

In a large bowl, combine the first six ingredients. In another bowl, whisk the eggs, cider and oil. Stir into dry ingredients just until moistened. Fold in apples. 

Fill greased or paper-lined muffin cups three-fourths full. Bake at 400° for 15-18 minutes or until muffins feel spongy when gently pressed. Cool for 5 minutes before removing from pan to a wire rack. Serve warm. Yield: 1 dozen.
