Food Evolution, a gourmet plant-based café, has recently opened in Ridgefield's Marketplace located at Copps Hill Plaza, 109 Danbury Road, taking over the space formerly occupied by a vegan cafe.
The new owner of Food Evolution is Ridgefield resident Elizabeth Berney, a passionate vegan and elementary school teacher for the past 18 years. Berney and her omnivore husband purchased the restaurant from its original owner, a local real estate developer eager to sell the restaurant to owners dedicated to maintaining a plant-based menu.
"The vegan lifestyle has been my passion (for the past eight years.) It became clear to me that the next step in my life was to leave the classroom in order to educate and feed our community delicious, gourmet plant based cuisine," said Elizabeth Berney.
Food Evolution's approach will be upscale, plant-based gourmet food rooted in all things vegetable, yet accessible and welcoming to omnivores, very much in the same style as NYC's Candle 79 and Blossom, and Chester, CT's Six Main, explained Berney.
Food Evolution is open for lunch and dinner from 11:30 am to 9 pm Monday - Thursday and from 11:30 am to 10 pm on Friday and Saturday. They are currently working on adding a liquor license and may extend their hours soon. For more information, follow Food Evolution's Facebook page.
